    • Onion. I like red onion or shallots if you can find them. These should be sliced or diced into small pieces.
    • Parsley. Fresh parsley leaves that have been roughly chopped.
    • Cilantro. Fresh and roughly chopped as well.
    • Optional: Arugula (chopped or as is), sliced peppers, or peas (or pods).

    Dressing.

    • Ginger. Freshly minced is preferred.
    • Dijon Mustard. I personally like the country style dijon because it is more coarse.
    • Maple Syrup. Offers a sweet balance.
    • Lemon Juice. Freshly squeezed is preferred.
    • Olive Oil. I prefer extra virgin for a recipe such as this one.
    • Optional: Seasonings such as salt and pepper to taste.
