    What you need to make Skillet Chicken Piccata Meatballs.

    Meatballs

    • Ground Chicken. This can be found at most grocery stores.
    • Breadcrumbs The breadcrumbs of your choice.
    • Egg Used for binding the ingredients.
    • Parmesan Cheese Freshly grated preferred.
    • Garlic. Freshly minced.
    • Parsley. Freshly chopped preferred.
    • Seasonings. Salt and Pepper.
    • Olive Oil For frying.


    Sauce

    • Butter. A butter alternative can be used.
    • Garlic Freshly minced
    • Chicken Broth. Low sodium chicken broth can be used.
    • Lemon Juice. Freshly squeezed is preferred.
    • Capers. Rinsed and drained.
    • Parsley Freshly chopped preferred.

    How to Make Homemade Chicken Piccata Meatballs

    Chicken Piccata Meatballs

    • Prep Time 15 minutes .
    • Cook Time 25 minutes
    • Servings 4 .
    • How to serve : Serve with pasta or as you would serve regular meatballs.
    • Notes: You will need a large bowl, whisk, and a large skillet.

    1. Meatballs. In a large bowl, combine together the ground chicken, breadcrumbs, egg, parmesan cheese, garlic, parsley, salt and pepper. Mix these ingredients until just combined, avoiding over mixing them. Then use a small or medium scoop to help you form 16 meatballs from the mixture.
    2. Brown. In a large skillet over medium heat, heat the olive oil for two minutes. Add the meatballs (depending on the size of your skillet, you may need to do this step in batches). Cook the meatballs until they are golden brown (about six to eight minutes, rotating as needed). Then transfer the browned meatballs to clean plate or similar holding area.
    3. Sauce. In the same skillet that you used for the last step, melt your butter. Once the butter has melted you can add the garlic and cook until fragrant (about 30 seconds). Then stir in the chicken broth, lemon juice, and capers. Simmer the ingredients for three minutes.
    4. Simmer. Add the browned meatballs to the sauce in the skillet and simmer the ingredients for 10 minutes, or until cooked through (165°F | 74°C internal temperature).
    5. Finish. You can sprinkle your meatballs with fresh parsley and serve hot with pasta, rice, bread, or as desired to soak up the sauce.

    Tips for making the best Piccata Meatballs

    Ground chicken was used in making my meatballs. Other ground poultry, such as turkey, could also work in this recipe.

    More helpful tips for you.

    • I like to use my hands (food service gloves) to combine together the ground meat in a recipe such as this one. When combining the ingredients it is important to not overmix them as doing so can cause the meatballs to become tough and less tender. Using a cookie scoop helps to insure that your meatballs are all a similar size which helps them cook similarly as a result.
    • Butter adds to the famous flavor of piccata but, it is not necessarily friendly to the Mediterranean diet. To make this recipe more friendly to the Mediterranean diet, you can use a butter alternative or olive oil and then add butter flavored extract to make up for the flavor.
    • Using freshly squeezed lemon juice is essential to that lemon flavor that makes this recipe to good. Avoid using a pre-packaged lemon juice as they often have other ingredients added to them.

    How to Store Piccata Meatballs made with Chicken.

    Once your chicken piccata meatballs have fully cooled they can be stored in an airtight container. When properly stored, chicken meatballs can keep for up to three days refrigerated or up to a couple of months when frozen.

    Meatballs
