For me, lemon juice is the perfect alternative to a regular tomato-based sauce.
Lemon is a nice idea especially for warmer weather as it has a lighter presence than tomato-based sauces.

However, lemon is even better in this recipe when it is balanced out with the garlic.

While the lemon adds some acidity to the meal, the garlic adds a touch of flavor.
For a summer meal, lemon and garlic are a perfect pair!

You may be wondering how do you make vegan pasta sauce creamy.

Regular pasta sauce that has both lemon and garlic will probably contain dairy as the liquid adding bulk and texture to the recipe. That dairy may be butter, heavy cream, as well as cheese.

Vegan pasta sauce does not include the usual dairy.

To make this recipe you will need a vegan butter, something that is available at most local grocery stores.
As for the ‘cream’, this recipe calls for a vegan heavy cream such as coconut cream. Coconut cream adds a nice flavor balance to the lemon and the garlic.

  1. Using fresh lemons is recommended for this recipe. While you could use lemon juice, the freshly squeezed lemons adds freshness to this recipe.
  2. The garlic can be minced or chopped for this recipe. I prefer the flavor of chopped garlic in this recipe.
  3. Top this pasta with a vegan parmesan cheese.

I like this lemon garlic pasta with a linguine or similar noodle.
The sauce is perfect with a longer and less dense noodle.

Serve this pasta with a bit of vegan vegan parmesan cheese on top.

I also like a vegetable stirred in such as sliced mushrooms or peas with this pasta.
Serving a light salad on the side is also a nice idea.

How to store leftover pasta.

This pasta should be stored in an air tight container and refrigerated. It will only keep for about a day or tow and also, I suggest you heat the pasta in a pan with a small amount of water added to regain the consistency.

About this recipe for vegan lemon and garlic pasta.

You can use the pasta of your choice to make this recipe. I prefer a longer noodle such as linguine with this sauce.

To make the sauce you will need a large skillet.

The sauce will be made in the skill. We will then first make the pasta as directed and then add it to the skillet with the sauce.

Ingredients needed to make this vegan pasta dish.

  • Pasta- one 16 ounce package. I like linguine for this recipe.
  • Garlic- 3 cloves. The cloves should be minced or chopped. Feel free to add additional cloves as desired.
  • Olive Oil- 4 tablespoons.
  • Vegan Butter- 5 tablespoons. Check your local grocery store refrigerator section for this. Vegan butter is becoming more common in the larger stores. Use a vegan butter that measures like real butter. There are shelf alternatives but, many of these are made with nuts, which may be too dense and flavorful for this sauce.
  • Lemon Juice- 5 tablespoons. That is about one large lemon. Use freshly squeezed lemons for best results in this recipe.
  • Vegan Heavy Cream – 4 tablespoons.
  • Also, Vegan parmesan cheese and seasonings as desired (such as salt and pepper).

How to make Vegan Lemon Garlic Pasta

  • Make the pasta as directed on the packaging. When the pasta is done cooking you can drain it.
  • Meanwhile, in a large skillet on medium low heat, heat the vegan butter and olive oil along with the garlic. Sauté the garlic until it becomes fragrant, about a minute.
  • Stir in the lemon juice and the vegan double cream. Increase the heat to medium and cook for another minute, stirring continuously.
  • Add the cooked pasta to the skillet and stir the ingredients so that the pasta gets well combined with the sauce. This step should take about two to three minutes. You can add any optional seasonings as desired.
  • Serve the pasta with toppings of your choice such as vegan parmesan.

Ingredients

  • 3 Garlic - minced or chopped
  • 4 tbsp Olive Oil
  • 5 tbsp Vegan Butter
  • 5 tbsp Lemon Juice
