    This is one of those recipes that using a ripe avocado is essential.
    Because the avocado will be used as a boat or a cup to hold other ingredients, it should be fresh and not soft.

    1. To test an avocado for ripeness, gently press on it. If the the avocado is soft yet, firm enough to hold its shape, it is just right for this recipe.
    2. To cut the avocado in half, simply use a sharp knife and cut from the crown lengthwise down on a cutting board. The knife should be inserted far enough that it touches the pit. Once you have cut around the entire avocado simply twist the two sides apart.
    3. Non keto diet followers can add additional filling ingredients such as corn kernels or fruit . Keto followers who are not vegan can use regular mayonnaise and cheese.

    How to store avocados.

    In the chance that you are only using half of the avocado or not eating both halves stuffed in one sitter, you should store it. Avocados are not a food that lasts long on their own once used.

    If you are only stuffing half of the avocado, remove the pit from the unused half and apply lemon juice to the meat before double wrapping it in plastic wrap for refrigeration. A leftover avocado that has been stuffed could also have lemon applied to its avocado meat and double wrapped for refrigeration being used within a day.

    You may be wondering is it okay to eat a brown avocado.

    Avocado meat turns brown when exposed to air and is said to not be a sign of being spoiled. Slowing down the browning process can be done by applying citrus juice (lemon, lime) and wrapping it well in plastic wrap.

    Ingredients needed to make keto and vegan stuffed avocados.

    • Avocados- 3 ripe. The avocados should be cut in half lengthwise with the pits removed. You can spray or apply lemon juice if you will not be eating all of the stuffed avocados or not using any of the slices.
    • Cucumber- 1 cup chopped. This is about a half of a large cucumber.
    • Celery- â…“ cup chopped. This is about two small celery sticks.
    • Tomato- ¾ cup chopped. Use a firm tomato and a serrated knife for best results. The kind of tomato that you use is your choice.
    • Red Onion- ½ cup chopped.
    • Vegan Mayonnaise- ½ cup. Non-vegans can use regular mayonnaise or a creamy dressing or even plain nonfat yogurt.
    • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

    How to make Stuffed Avocados.

    • Prepare the avocados as indicated above. Slice them in half on a cutting board from top to bottom and remove the pit. Place the avocados on a dish or similar space.
    • In a medium mixing bowl. Use a fork to mix together the cucumber, celery, and onion. The stir in the mayonnaise.
    • Scoop out a tablespoon of meat from each avocado half and stir that into the ingredients in the bowl as well. Season as desired.
    • Fill each avocado with the filling from the bowl and serve.
    • For best results, eat the stuffed avocados while fresh, otherwise avocado would turn brown and look less appetizing.
    • Store uneaten stuffed avocados well wrapped in plastic for up to one day as it will begin to brown.
