Ingredients needed to make keto and vegan stuffed avocados.
- Avocados- 3 ripe. The avocados should be cut in half lengthwise with the pits removed. You can spray or apply lemon juice if you will not be eating all of the stuffed avocados or not using any of the slices.
- Cucumber- 1 cup chopped. This is about a half of a large cucumber.
- Celery- â…“ cup chopped. This is about two small celery sticks.
- Tomato- ¾ cup chopped. Use a firm tomato and a serrated knife for best results. The kind of tomato that you use is your choice.
- Red Onion- ½ cup chopped.
- Vegan Mayonnaise- ½ cup. Non-vegans can use regular mayonnaise or a creamy dressing or even plain nonfat yogurt.
- Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
How to make Stuffed Avocados.
- Prepare the avocados as indicated above. Slice them in half on a cutting board from top to bottom and remove the pit. Place the avocados on a dish or similar space.
- In a medium mixing bowl. Use a fork to mix together the cucumber, celery, and onion. The stir in the mayonnaise.
- Scoop out a tablespoon of meat from each avocado half and stir that into the ingredients in the bowl as well. Season as desired.
- Fill each avocado with the filling from the bowl and serve.
- For best results, eat the stuffed avocados while fresh, otherwise avocado would turn brown and look less appetizing.
- Store uneaten stuffed avocados well wrapped in plastic for up to one day as it will begin to brown.
