For anyone wondering if you can easy chickpeas raw, here is what you need to know.

I know that I have posted other recipes that call for chickpeas.
The raw chickpeas in these recipes call for a preparation process to get those chickpeas to a state that makes them edible for the recipes.

This recipe calls for canned chickpeas instead.

You can find canned chickpeas online if you have trouble finding them.
To prepare your canned chickpeas simply drain them and rinse them before adding them to this recipe.

By the way, if you are wondering are canned chickpeas healthy, here is your answer.

Chickpeas are a coveted food with followers of vegan and plant based diets.
This is for a good reason.

Chickpeas have both protein and fiber in them.

They are also low in fat and contain iron.
Even better, there is a lot that you can do with chickpeas by adding them to recipes.

Tips Greek Chickpea Salad

I mentioned a moment ago that for this recipe, you will need canned chickpeas . To prepare those chickpeas simple drain them from the can and then rinse them.

Here are some more great tips for you.

  1. I am calling this a ‘Greek Salad’ because it features popular Greek ingredients such as feta cheese and kalamata olives. Being a Greek salad, there is no salad base included. Feel free to serve this salad with greens if you that is what you like.
  2. This salad has its own simple vinaigrette dressing. Feel free to use a Greek Dressing of your choice if you would rather do so.
  3. For best results, this salad should be dressed in the vinaigrette just before serving.

Greek Salads are generally an easy salad to make once you gather your ingredients.

The secret to making a good one is to offer one or more green vegetables that are complemented with a burst of red within them.
Thus, it really is not just the taste of this salad that makes it so good. It is the colors as well.

Those green vegetables are pretty much the standard in every Greek Salad.
I am talking about the cucumbers and peppers, lettuce, or herbs that are part of the salad itself.
Of course, the red comes from the tomatoes that balance out that green in color and also in taste.

Greek Salad is most often served with a vinaigrette dressing on top or tossed into it.

Vinaigrette dressing is an easy dressing that you can make just before serving your salad.
This dressing is also known for its balance of a great tasting extra virgin olive oil with a tangy red wine vinegar.

  • Chickpeas- 1 can (15-16 ounce can). Prepare your chickpeas by draining them and the rinsing them.
  • Cucumber- 1 average sized. Chop your cucumber into small pieces.
  • Onion- 1/4 cup sliced thin. Red or purple onions.
  • Tomatoes- 1/2 cup sliced. I like small tomatoes such as cherry or grape tomatoes.
  • Kalamata Olives– 1/2 cup chopped.
  • Olive Oil (extra virgin)– 1/4 cup
  • Red Wine Vinegar– 3 tablespoons.
  • Seasonings as desired-
    This can include Italian Seasonings, Greek Seasonings,
    Salt, and/or Pepper.
  • Optional- Cilantro or parsley of choice/ oregano.
  • Feta Cheese- 1/2 cup crumbled.

How to make this Greek Chickpea Salad

  • In a large serving bowl toss together the chickepeas, cucumber, onions, tomatoes and kalamat olives. Tip: if you are traveling with this or are planning on preparing it sometime before serving it, use a a large bowl with a cover.
  • Prepare the dressing by whisking together the olive oil, vinegar and seasoning together just before dressing the salad. Then toss the ingredients in the bowl in the dressing.
  • Top the salad just before or when serving individual portions, with the remaining ingredients.
