Roasted tomatoes is certainly an underrated dish if you were to ask me.
For as easy as this is to make and as delicious as it is to eat, I would think that more folks would be serving this up.
What I also like about this recipe is that it can be made on the grill.
Making this on the grill, indoor or outdoor version, is easy to do. However, making these tomatoes in the oven is easy to do as well.
I must admit that I do have an abundance of tomatoes acquired this time of the year.
Yes, many of those tomatoes have been grown in my garden itself. However, I also have generous friends with successfully abundant gardens that are also bearing wonderful tomatoes.
The good news about tomatoes, other than they are delicious and easy to use, is that they are also pretty healthy to eat.
What I mean is that the average tomato has a good supply of Vitamin C, Potassium, and Folate. This is in addition to being relatively low in calories, carbs, and fat.
You may be wondering what kind of tomatoes are the best ones to use in this recipe.
Certainly, you should go with both what you have on hand and what your preferences are. For example, Roma tomatoes are flavorful and get even more flavorful when roasted.
The size of your tomatoes is also of some importance when it comes to choosing the best one for this recipe.
This is especially true if you are using a grill with grates as you do not want to risk losing a small tomato through the grills grates. Also, larger tomatoes tend to be milder in taste than smaller tomatoes and as a result, can affect the taste results of your efforts.

Here is what you will need to make your fire roasted tomatoes.
- Tomatoes, such as Roma (plum) Tomatoes- 2 pounds, about 12-15 depending on the size..
- Olive oil- ½ cup divided.
- Garlic- 3 cloves minced.
- Seasonings- 1 and ½ tablespoons total. As mentioned above, using Italian style seasonings may seem like a no-brainer in a recipe such as this one. However, perhaps using a seasoning that resembles a fire roasting would even taste better than Italian seasonings in this recipe (especially if you are roasting in your oven!).
How to Make Fire Roasted Tomatoes
- Prepare your tomatoes by slicing them lengthwise in half. Remove as much fluid and as many seeds as possible. You can use a spoon to help you with this process.
- Prepare a grill basket or grill pan with brushed on olive oil. Or, if using the oven method, prepare your pan. Alternatively, if you are using a pan or (baking sheet) you can use aluminum foil with nonstick spray.
- Preheat you oven to 450 or your grill on high if using a grill.
- In a medium bowl, combine together the remaining olive oil with the garlic and seasonings.
- Dip each individual tomato half the bowl, covering the entire piece well and allowing the remaining mixture to drip back into the bowl. Then place the tomato half on the prepared basket or pan with the sliced side up.
- Drizzle any remaining oil mixture over the tomatoes after you are done placing them all on to the prepared basket or pan.
- Grill the tomatoes until they are charred and then allow them to cool before serving (it should take just a few minutes).
- Oven method, roast for 45-50 minutes or until the the tomatoes begin to brown. Allow them to cool before serving.
