You may already know what is not allowed on the Mediterranean diet.
The real secret of being successful on the Mediterranean diet is more about moderation than it is about avoiding foods. Having said that, there are some foods that should be avoided however, non of those foods are ingredients in this recipe.
This recipe can be even more friendly to the Mediterranean diet by making simple adjustments as you desire.
This recipe calls for mozzarella cheese and your choice of feta cheese or ricotta cheese. While these cheeses are not used in a large amount, you can opt to use less amount of the cheeses to make this dish more friendly.
You may be asking are zucchini noodles healthy.
Let me first mention that while this recipe is for Zucchini noodles, you are welcome to use the pasta of your choice and not the zucchini noodles. Zucchini noodles are used in this recipe because they look and taste great with this vegan Bolognese.
Zucchini noodles are simple to make at home.
All you need to make them in this recipe are four zucchinis and a spiralizer to spiralize them in to make the noodles. Zucchini noodles really are a delicious and easy alternative to the usual pasta.
Tips zucchini ravioli tasty.
Just like with anything else, seasoning can certainly make the dish.
I like using salt free or low salt seasonings especially in this kind of a recipe.

Easy zucchini ravioli that can be made in under an hour.
This is a three part recipe.
The first part of this recipe is really about slicing your zucchini into strips.
How to prepare the zucchini strips for this recipe.
Remove the ends to the zucchini and then use a mandolin or vegetable peeler to cut the zucchini lengthwise to make the strips about 1/16th to â…›" thick. Removing the skin is optional however, if you keep the skin on, I suggest that clean or rinse the zucchini.
Ingredients needed to make this zucchini ravioli
- Zucchini- 2 average sized.
- Feta or ricotta cheese- 1 cup. See above for vegan alternative.
- Spinach- 2 cups, leaves lightly packed.
- Mozzarella Cheese- ½ cup plus additional as desired for topping.
- Tomato Sauce- 1 cup.
- Garlic- 3 cloves minced and divided. That is about three teaspoons.
- Olive Oil- 2 tablespoons, divided.
- Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
- Optional ingredients include parmesan cheese and/or ground poultry or meat alternative.
How to make Mediterranean Diet Zucchini Ravioli
- Prepare your zucchini as described above. Make sure that you strips are thick enough to hold ingredients when rolled and without breaking.
- In a skillet over medium heat, heat one tablespoon of the olive oil along with two of the minced garlic cloves (two teaspoons). Cook for about three minutes or until the garlic becomes fragrant. Then add the spinach and cook for another two minutes, stirring continuously.
- Remove the skillet from the stove and stir in the feta cheese along with any desired seasonings. Transfer this mixture to a medium bowl and blend it with a hand blender or food processor. Allow this to set while you work.
- Prep an 8X8" baking dish for nonstick and preheat your oven to 400.
- To make the sauce, place the tomato sauce, the remaining garlic and additional seasonings as desired in a clean blender and process until blended. Then transfer the sauce to the prepped baking dish, spreading the sauce evenly in the dish .
- On a cutting board or clean working surface, you can assemble the ravioli. To do so extend three slices of zucchini, one over the other, making a kind of cross or asterisk shape with space in the center to hold the interior ingredients. If one strip is too thin, simply put one extra over it.
- Use a tablespoon to add a dollop of the cheese and spinach mixture to the center of each of the crossed zucchini strips. Fold up the strips, one at a time, until the ravioli is closed and transfer the raviolis the the baking dish with the tomato sauce.
- Top this with any optional additional cheese. Bake for 15-20 minutes or the cheese begins to turn golden the zucchini raviolis appear to be are softened.
