This is a colorful fall-themed salad gives us some wonderful flavors.
The lettuce used in the salad is 'rocket' or arugula which will give us a 'pepper-like' flavor to balance out the orange vinaigrette dressing.

This recipe is for anyone asking what can I do with a lot of arugula.
I certainly know what it is like to have a lot of arugula as I like to buy Spring Salad.
Spring Salad can sometimes be loaded with arugula in comparison to the other kinds of lettuce depending on what is available.
Making a salad with the arugula is probably the obvious way to use up arugula.
Because arugula can have a flavor that is a bit strong for some folks, we will add other flavors to help balance it out. Feta cheese seems to do a great job at balancing the flavor of arugula.
Arugula is also said to be good for your body.
I should start by mentioning why I am including arugula in this salad. Arugula has a shape (kind of not as wide as other leafy vegetable choices), taste (more bitter than others) and color (dark green) that seem to all work nicely with the beets in this salad.
Arugula is low in calories and contains Vitamins K and A.
However, what arugula is also popular for, besides its looks and taste, is the fiber that is in it.
To prepare the arugula for this salad, wash it just before using it rather than washing it and then storing it until making your salad.
Tips for making this arugula and pumpkin salad.
Arugula lettuce should not be washed until you are ready to actually use it. To store your fresh arugula simply wrap it loosely in a paper towel and then in a bag, storing it in the refrigerator.
Here are some more great tips for you.
- Arugula, aka 'garden rocket' packs a flavorful punch. If you decide to add your own dressing or seasonings to this salad, I would suggest balancing out the arugula flavor with something a bit milder.
- Feel free to replace the almonds with another nut if you prefer to. Pecans or walnuts are good choices for this salad.
- I usually get my arugula from already prepared spring salad. Feel free to use a spring salad in this recipe if you would like to.
How to make homemade Orange vinaigrette dressing.
To make the dressing for this salad you will need:

- Fresh Orange Juice- 2 tablespoons.
- Olive Oil- 2 tablespoons.
- Red Wine Vinegar- 1 tablespoon.
- Honey- 1 tablespoon (vegans can sub in maple syrup).
- Seasonings as desired, such as salt and pepper.
How to make the dressing.
In a bowl using a whisk or in a salad dressing shaker, combine the ingredients together. The dressing can be stored in the refrigerator in an air tight container for up to five days.
How to store this salad.
This salad should be refrigerated in a covered container.
If you choose to make this salad in advance, add arugula, feta cheese, and the dressing just before serving.

Roasted Pumpkin and Feta Salad
How to roast pumpkin.
By the way, butternut or similar squash will also work in this recipe.
Prepare the pumpkin or squash by removing the skin or removing it from the skin (better when using pumpkin) and remove the seeds. Then slice it into bite-sized chunks.
Preheat your oven to 400 and prep a rimmed baking sheet for nonstick.
Place the squash or pumpkin chunks on the baking sheet and season as desired. Bake until tender (25-30 minutes) flipping or stirring the chunk throughout the baking as needed to evenly bake.
Ingredients needed to make this roast pumpkin rocket and feta salad
- Orange Vinaigrette dressing- recipe above.
- Roasted pumpkin or squash- see above. 1 small sized pumpkin or butternut squash should work in this recipe.
- Arugula - 3 cups.
- Almonds- ¼ cup. Roasted.
- Feta Cheese- ½ cup crumbled.
How to make this Roasted Pumpkin and Feta Salad wit Orange Vinaigrette Dressing
- Prepare the dressing as indicated above. Refrigerate the dressing while you prepare the rest of the ingredients.
- Roast the pumpkin as indicated above.
- Prepare the arugula by allowing it to dry if it is wet from rinsing. Tear any larger leaves to bite sized if needed. Place the arugula in a large bowl.
- Once the roasted pumpkin has cooled, you can add it to the large bowl with the arugula. Then toss with one to two tablespoon of the dressing or as needed.
- Top with the remaining ingredients and serve.
