This recipe is for anyone asking for a blood orange and fennel salad.

This recipe does call for a blood orange in addition to a regular orange.
If you cannot find a blood orange at your local grocery store, feel free to sub in a regular orange.

Blood oranges get their name from their flesh which resembles a blood color.

The addition of a blood orange in this salad really gives this recipe a Mediterranean feel.
Blood oranges also have a unique flavor that reminds us of grapefruits with possible a bit of cherries thrown in.

You may be wondering how do you cut fresh fennel.

Prepare the fennel by washing in cool water and allowing it to dry. Then remove the stems and green beards with a clean cut.

To prepare the fennel for this recipe, trim off the tops and the roots.
Peel away the outer layer of the fennel. Then cut the very thin julienne heart with the help of a mandolin or a knife.

Tips for making a Orange and Fennel Salad

Fennel is a healthy herb that originated from the Mediterranean region of the world.
It is said that every part of the fennel is edible and in fact, quite nutritious as well.

  1. This recipe comes with a homemade vinaigrette dressing. Feel free to use your own dressing if you prefer to.
  2. Serve the fennel and orange salad immediately after preparing for best results. This is because fennel tends to blacken quickly and lose crunchiness if it sits long enough.
  3. Leftover salad can keep them in the refrigerator in an airtight container for a maximum of two days. I suggest adding the dressing and the fennel just before serving.

How to make vinaigrette dressing for Mediterranean Diet Orange and Fennel Salad

You can prepare the dressing a head of time and add it to the salad when you are ready to serve it. I make my dressing in a shaker bottle as it can be made in the bottle, stored in the bottles and applied right from the bottle..

Use a whisk or a fork to combine the following ingredients (unless you are using the shaker bottle);

  • Olive Oil- 4 tablespoons.
  • White Wine Vinegar– 2 tablespoons.
  • Ginger- as desired, grated or ground.
  • Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.

Fennel and Orange Salad with Olives

This salad can be easily personalized by adding dried fruit, chicken, or even nuts to it.
Simply squeezing a bit of citrus juice (lemon, lime, etc) on top can also personalize this recipe.

This is a simple salad that features flavors popular with the Mediterranean diet.

This salad can be served as a side, an appetizer or as a meal.

Pair this salad with a sparkling wine or champagne. Serve it with fresh bread on the side.

Ingredients needed to make a Mediterranean Diet Blood Orange and Fennel Salad

  • Dressing using the recipe above.
  • Fennel-2. The fennel should be trimmed, cored, and sliced. Peel away the outer layer of the fennel. Then cut the very thin julienne heart with the help of a mandolin or a knife.
  • Oranges- 2. One blood orange if possible.
  • Radish- 3. Wash and allow the radishes to dry. Then slice them thin.
  • Kalamata Olives- 8.Olives should be pitted and sliced.
  • Optional: nuts, dried fruit, cheese or other items.

How to make Mediterranean Diet Orange and Fennel Salad,

  • Start by placing the prepared fennel in a large serving bowl then drizzle part of the prepared dressing over the fennel and toss.
  • Next, prepare the oranges by cutting of the top and the bottom to make them flat. One half inch cut should be okay. Cut the oranges in half making two wheels. Remove the skin and slice the oranges into bite sized pieces. Place the orange pieces into the large serving bowl.
  • The radishes should be shaved for this recipe. After they have dried from being washed, us a mandolin or a knife to thinly slice or shave them. Then place the radishes into the large bowl. Also, add the olive slices.
  • Toss all of the ingredients in the large serving bowl with the remaining vinaigrette dressing and serve. Top with optional nuts and other ingredients if desired.
