Vegan Udon Noodle Stir Fry
We know that pasta is a big part of the Mediterranean diet. However, udon is a pasta that is Japenese in origin.
Making the marriage of pasta between origins even better in my opinion is that that udon is made with wheat flour.
I know that my Skillet Spaghetti for Two recipe was a popular one.
Being that it is a spaghetti recipe, it is a pretty classic Mediterranean diet pasta dish. Having said that, I must say that this udon noodle stir fry is pretty great as well.

If you were to ask what do you use Udon noodles for, I would say, well, eating a great meal.
Often compared to the soba noodle, the udon noodle is a thicker noodle and thus, a bit more hardy. But, both the udon and soba noodle are great choices for vegan and Mediterranean diet followers.
Classic Udon noodles are not made with eggs.
Udon noodles are usually made with wheat flour, a bit of salt, and water. I would, however, make sure that any purchased udon noodle is made without eggs just to be sure as some folks may put them into their udon.
You may be wondering how do you fry udon noodles.
There is not a lot of work that goes into making this stir fry recipe. This means that frying, or cooking, the udon noodles in this recipe are a lot easier than you may think it to be.
We will first prepare the udon noodles before we actually add them to the stir fry.
By preparing the noodles, I mean adding the noodles to boiling water for a minute, gently stirring to break up the noodles. Then we will drain the noodles and add them to the pan with the cooking vegetables to finish the dish.

I mentioned earlier to check the packaging on your Udon noodles to make sure that they are vegan udon noodles, made without eggs. Also, I mentioned that preparing the noodles to add to the stir fry is a simple process that calls for adding the noodles to boiling water for about a minute.
Here are some more great tips for you.
- One mistake that is often made is over-stirring the udon noodles while they sit in the boiling water. Think of this is more of a 'swish' rather than a 'stir'. We are simply trying to keep the noodles from sticking to one another while we do this.
- A properly cooked udon noodle should be a bit chewy yet, warm when you test it. They really do not have a lot of taste to them.
- I suggest having all of your vegetables ready to go, that is chopped before you begin making this recipe. Once you get started, this dish can be made pretty quickly.
- Fresh or frozen udon noodles are always preferred in this recipe. Having said that, this recipe will work fine with most any Udon noodle that you are able to find.

Obviously, you can use Udon noodles in a great tasting stir fry such as this one. To be honest, I would have no problem eating them alone, as they are, once they have been prepared in boiling water.

While you could look more authentic or knowledgable if you use a stir fry pan to make a stir fry (makes sense right?). However, if all you have is a skillet to make a stir fry in then I say go for it! You will find that a skillet may be easier to cook in and that you will need less oil to cook your food in because of the shape of the skillet.
What you will need to make this Vegan Udon Noodle Stir Fry
- Canola oil- 1-2 teaspoons. Can sub in peanut oil or flaxseed oil or similar oils.
- Soy Sauce- 2 tablespoons. Low Sodium Soy Sauce is okay to use. Feel free to use additional as needed.
- Bok Choy- 2 cups chopped. Feel free to sub in a similar cabbage.
- Shitake Mushrooms- ¼ pound, stemed and sliced.
- Peppers- 2 red sliced.
- Scallions- 2. Sliced.
- Ginger- 2 teaspoons grated.
- Udon noodles - 1 pound. This is 14-16 ounces depending on the packaging (usually 7-8 ounces per package, so you will need two).
- Sesame Seeds- as needed for topping.
Vegan Udon Noodle Stir Fry
- Prepare your vegetables by cleaning them and slicing or chopping them as needed for this recipe.
- In a skillet or stir fry pan, preheat your pan with the oil on medium heat.
- Add the soy sauce and then the bok choy to the skillet and cook until it begins to look tender (3-4 minutes).
- Next, stir in the mushrooms, peppers, scallions, and ginger. If needed, you can add a bit more oil as desired. Cook for 2-3 minutes or until the vegetables appear to be tender.
- Meanwhile, bring a pot of water to boil for the noodles. Once the pot begins to boil add the noodles and swish rather than stir them to keep them from sticking. Allow the noodles to stay in the water for one minute and then drain the noodles.
- Toss the noodles with the other ingredients and serve with the sesame seeds on top.
