This recipe features both whole wheat flour and cornmeal.

This recipe is great for anyone asking how do I make cornbread from scratch.

Making cornbread from scratch is not as hard as you may think it to be.
This is partially because cornbread is a quick bread rather than a bread made with yeast and needs time to rise.

We are also adding wheat flour to this recipe.

Adding wheat flour to this cornbread helps add gluten to a bread that would normally be dry and crumbly.
You have probably noticed that cornbread tends to be a more crumbly bread than most other bread and this is due to the missing gluten.

You may also be wondering what is the best cornmeal for cornbread.

Yes, there are many different kinds of cornmeal on the market. Who knew right?

There are some kinds of cornmeal that are better than others when it comes to making a bread.

Some folks prefer a medium grind cornmeal for a bread. This is because medium grind cornmeal will produce a better texture with less crumbs.

Tips for making cornbread.

I just mentioned that using medium grind cornmeal will produce a better texture with less crumbs. Also, adding whole wheat flour adds a gluten to this recipe which will help the cornbread stick together.

  1. While cornbread does not always include some kind of sugar or sweetness, I am adding a bit of honey to this recipe. I am doing this to balance out the Jalepeno peppers.
  2. This recipe is for baking the bread in an ovenproof skillet such as a cast iron skillet. Preheating the skillet is a good way to ensure even baking however, be careful as these skillets can be heavy and they will be warm or hot to handle.
  3. Butter and buttermilk are standard ingredients in cornbread. However, to make this more friendly to the Mediterranean diet, using a neutral oil for part or all of the butter is an option. Buttermilk adds moisture and acidity. An option for an alternative to buttermilk is to try using plain yogurt or milk with vinegar.

I almost always line a baking pan with parchment paper which helps with both clean up and cutting up. Also, baking will be longer as we have lowered the temperature of the oven and be use the buttermilk as it will help the cornbread rise.

  • Salt– ½ teaspoon
  • Sugar– 2 tablespoons. Can use honey or alternative.
  • Eggs- 2, beaten
  • Butter- 3 tablespoons melted. Mediterranean diet folks can try subbing in a plant based neutral oil such as canola or sunflower oil for all or part of the butter.
  • Buttermilk- 1 ¼ cups. An option for an alternative to buttermilk is to try using plain yogurt or milk with vinegar.
  • Optional- cheese such as shredded cheddar as desired for extra flavor.

  • In a large mixing bowl, use a whisk or fork to mix together the cornmeal, flour, baking soda, baking powder, and salt. If you are using sugar you can add it this bowl. A non-dry sugar alternative can be added to the next bowl instead.
  • Next, in a medium mixing bowl, mix together the eggs, butter and buttermilk. Add any non dry sugar alternative such as honey to this bowl.
  • Transfer the wet ingredients from the medium bowl to the larger bowl with the dry ingredients and stir until just mixed. Then fold in the sliced peppers saving a few to place on the top of the cornbread before placing it into the oven.
  • Bake the cornbread until firm about 20-25 minutes. A toothpick can be used to test to see if the cornbread is done. Also, baking times can vary depending on what you are baking your cornbread in.
  • Allow the cornbread to cool a bit before cutting and serving.
