That recipe for a blender pumpkin soup is similar to this one in that they can both be made in a blender.
However, this avocado and pea soup can be served cold.

This recipe is great for anyone asking what can I do with extra avocado.

Adding you avocado to soup is a great way to add both flavor and consistency to soup.
The experts say that avocados are healthier way to add fat to about anything.

According to the experts, avocados may be high in fat but, the fat is considered to be a ‘good’ fat.
It is that fat that will make the consistency of this soup more rich and flavorful.
To keep the avocado from turning the soup brown we will be adding lemon juice.

This recipe can be entirely made in a strong blender such as a Vitamix.

To make this soup recipe entirely in your blender simply skip the starting step that calls for boiling vegetable broth on the stove. Instead of this you can place the ingredients from the broth step into the the blender with the peas and blend on high for five minutes or until you see a steam.

Another option for making this soup is to use an immersion blender.

I would suggest following the directions give as is and then using an immersion blender instead of of a regular blender. You will probably need to make this soup in batches.

Tips for making this avocado pea soup.

I just mentioned that this recipe calls for using a stove to start the broth in this soup.

Also mentioned is that you can use a Vitamix or similar strong blender to make this recipe entirely in a blender.

Here are some more great tips for you.

  1. Adding fresh herbs such as parsley, tarragon, or cilantro can really make this soup taste even better. Topping your soup with there herbs before serving can also make for a nice presentation.
  2. Working in batches may be the best way to make this soup. Batches help maintain control over the quantity as well as the quality of the soup.
  3. This soup may taste even better with a few drops of hot sauce added to it. I would suggest that you add it a few drops at a time and to the individual bowls before serving since not everyone may enjoy this idea.

It is important the your avocado is not too ripe or not to overripe for this recipe.
Amazingly, the ripeness of the avocado can have an affect on the quality of the flavor.

Use two avocados that are of average size.

The ingredients needed to make this Chilled Avocado and Pea Soup

  • Vegetable Broth– 2 cups. Feel free to use another broth if desired.
  • Avocados- 2 average sized (about eight ounce each). Slice the avocados in half, remove the peel and skin.
  • Peas- 1 1/2 cups. Frozen in okay.
  • Garlic- 1 clove minced or chopped.
  • Lemon Juice- 1/2 tablespoon.
  • Fresh Herbs- 2-3 tablespoons. This can include tarragon, parsley or cilantro.
  • Optional- Yogurt or sour cream as desired for thickening.
  • Optional- Seasonings as desired. This can include Italian Seasonings, Salt,
    and/or Pepper.
  • Optional- Hot sauce as desired.

How to make this Chilled Avocado and Pea Soup

  • Start by cooking the vegetable broth as indicated on the packaging.
  • While you broth is cooking, mash the avocados in a large bowl.
  • If you are using a large blender to make this recipe, transfer the broth along with the peas, garlic, and lemon juice to the blender. Blend this until smooth then add the avocados, herbs, and optional ingredients including seasonings and blend.
  • Refrigerate your soup for at least two hours or until chilled before serving. Some folks like to top their soup with sour cream, a drizzle of oil or with additional herbs on top.
  • Immersion blender folks can simply use the large bowl that was used to mash their avocados to make this recipe. Feel free to make this in batches
