    1. Prepare. Preheat your oven to 375°F. Prep your muffin pan for nonstick.
    2. Zucchini. Shred the zucchini. You can use a box grater to easily do this. Then place the shredded zucchini on a small stack of clean paper towels to drain the excess water (you can also blot the shreds).
    3. Flax. In a large mixing bowl, use a fork to combine together the flax and oat milk. Allow this to sit while you move on to the next step.
    4. Dry ingredients. In a medium bowl, use a whisk to combine together the flour, baking powder, salt, cinnamon, nutmeg, and lemon zest.
    5. Combine. Use a clean whisk to combine together the maple syrup and oil with the ingredients in the large mixing bowl (flax and oat milk). Then whisk in the dry ingredients from the medium bowl. Lastly, use a rubber spatula or similar item to fold in the chopped walnuts.
    6. Bake. Fill the muffin cups about three fourths of the way full. Bake the muffins for 25-30 minutes or until a toothpick inserted in the center of two of the muffins comes out clean.
    7. Cool. Allow the muffins to cool in the pan for ten minutes before transferring them to a cooling rack to fully cool or serve.

    Tips for making the best Zucchini Muffins

    It is important that the zucchini is prepared properly to keep the moisture balanced in these muffins. You can leave the skin on the zucchini as it will soften up during the baking process. I find that when shredding the zucchini, using the large holes of a box grater is easy and works best. Then blot the shredded zucchini lightly with paper towels to remove excess surface moisture, leaving some of the moisture behind as it helps keep the muffins soft.

    More helpful tips for you.

    1. In the third step, let the flax and oat milk sit for five minutes before adding the other ingredients so it has time to thicken and work as an egg replacer. You can move on to the fourth step while the flax and oat milk sit.
    2. When adding the shredded zucchini, use a rubber spatula or similar item to fold, rather than mix, the zucchini into the other ingredients. This helps keep the zucchini intact and prevents the other ingredients from absorbing excess moisture before baking.
    3. I would check for doneness at about 25 minutes of baking. Once the muffins are done baking, allow them to cool for at least 10 minutes before removing them from the pan so they can set properly and hold their shape.

    FAQ

    • Do I need to peel the zucchini?
      No. I would remove the ends and any bad spots, wash the zucchini, and then dry it off. There really is no need to peel the zucchini as the skin is tender, adds a little color, and softens as the muffins bake.
    • Do I need to squeeze the moisture out of the zucchini?
      No. We want a bit of the moisture from the zucchini in the muffin batter. Just lightly blotting the shredded zucchini with clean paper towels to remove excess surface moisture should work. There is no need to squeeze the shredded zucchini dry.
    • Can I use a different dairy-free milk?
      Oat milk is a favorite milk for recipes such as this one due to its texture and moisture. However, most dairy-free milks should work including as almond milk, soy milk, or cashew milk. You can learn How To Choose The Right Vegan Milk here.
    • Can I use honey instead of maple syrup?
      Yes but, honey does not measure 1:1 with maple syrup (you will need to adjust as needed), it is not vegan, and it can slightly change the flavor of the muffins.
    • Why did my muffins turn out dense or wet?
      In this recipe, this can happen if the batter was overmixed, the zucchini was too wet, or the batter sat too long after the zucchini was added. For best results, lightly blot the zucchini, mix gently, and bake right away rather allowing the mixing batter to sit.

    • For Chocolate Chip Zucchini Muffins – Swap the walnuts for dairy-free chocolate chips for a sweeter, more dessert-like muffin.
    • To make Raisin Zucchini Muffins – Swap the walnuts for raisins for a naturally sweet, classic muffin variation.
