I think of this recipe as a marriage between a favorite Mexican dip and favorite Italian dip.
What could be better than a combination of two great dips?
This recipe would go great with my Homemade Pita Bread.
You could easily spread some of this delicious pesto on a some pita bread and eat it like that.
However, I like the idea of making a sandwich with the pita bread and avocado pesto too!

I have wondered what makes pesto pesto anyway?
While this recipe for avocado pesto may not be a 'true' or authentic pesto, I would still call it one.
You could however call it a kind of guacamole too if you wanted I suppose.
There is a recipe for true pesto.
Traditional pesto is a combination of basil leaves, garlic, pin nuts and maybe a few other ingredients that have been combined with olive oil. You can add this pesto to another dish or simply dip your favorite bread in it.
There are some benefits of avocado.
Besides have a flavor, fat, and texture that helps add to a recipe such as this one.
Avocados are known to add beneficial nutrients to a recipe that we are told are good for us.
Preparing the avocado for use in this recipe is simple.
It is best to use a ripe avocado for best results. Peel the avocado and dice it up as well.
Tips Easy Avocado Pesto
I just mentioned that you should use a ripe avocado in this recipe. The avocado should be peeled with the pit removed and then diced up.

- To get your avocado ripe simply place it in a paper bag at room temperature for a few days. Placing an apple in the bag with the avocado can help speed up the ripening process as well.
- Avocado pesto actually can make for a great sauce as well. Simply toss this pesto with your favorite cooked pasta and serve!
- Pine nuts are the usual 'nut' ingredient that is part of the usual pesto. However, pine nuts can be hard to find. You can easily sub in chopped walnuts, chopped pecans, or even pistachios for the pine nuts.

Certainly, serving this pesto fresh really is best when it comes to freshness.
However, sometimes we have leftovers or want to make this in advance to bring to a gathering or share with others.
Here is how to keep the avocado from turning brown.
Adding the lemon juice adds both flavor and helps to keep the avocado from browning.
Also, in addition to the lemon, you can wrap the leftovers in an air tight container or covered really well (I double and sometimes triple!) with plastic wrap and store in the refrigerator for up to a few days.
This recipe works best when made in a food processor.
However, I am a fan of my Vitamix blender for this recipe as well. Both food processors and blenders should be okay for you to use with this recipe.

- Avocados- 2. The avocados should be pitted, peeled and diced.
- Basil- 1 cup, fresh leaves.
- Pine nuts- ¼ cup. You can sub in chopped walnuts, chopped pecans, or even pistachios for the pine nuts
- Olive Oil- 3 tablespoons. You can add additional as needed to make this into a sauce.
- Lemon Juice- 2 tablespoons. That is about one small lemon.
- Garlic- 3 cloves chopped.
- Seasonings to taste. This can include Salt,
and/or Pepper.
How to make this Easy Avocado Pesto
- Combine together the avocado, basil and nuts in the processor or blender and pulse until the ingredients are chopped but, not mashed together.
- Add the olive oil, lemon juice and garlic and blend or process until you reach your desired consistency or until blended. Season as desired.
- Serve immediately or store well covered in the refrigerator.
