How to make Honey Dijon Shredded Chicken

- Prep Time 15 minutes.
- Bake Time 60 minutes .

- Notes: You will need a Oven Safe Dutch Oven, Good Pair of Oven Mitts, a whisk, meat thermometer, and two forks.
- Prepare. Preheat your oven to 375f. You can spray your Dutch oven with nonstick if desired.
- Combined. Use a whisk to combine together the beef consomme, olive oil, light brown sugar, and dijon mustard. Then add the seasonings (smoked paprika, garlic powder, onion powder, pepper, and chili powder).
- Chicken Add the chicken to the Dutch oven and then use a fork to poke holes in the chicken four times. Use a spoon to spoon some of the liquid over the chicken.
- Bake. Cover the Dutch oven and bake the chicken for 45 minutes or until it reaches an internal temperature of 165f.
- Shred. Carefully take the Dutch oven out of the oven and then bump the temperature up to 400f. Transfer the chicken to a clean cutting board or similar item and then use two fork to shred the chicken. Once the chicken has been shredded you can place it back into the Dutch oven and mix it with the other ingredients.
- Finish Place the Dutch oven back into the oven, uncovered, and bake for 15 minutes.
- Rest. Let the chicken rest in the Dutch oven for 10 minutes before serving to allow the juices to soak in.

Boneless skinless chicken breasts are used in this recipe as a leaner option. You could however use skinless chicken thighs for a more moist and flavorful chicken or even a mix of breast and thighs as a compromise.

- Beef Consomme is used as a base in this recipe. You alternatively use a broth such as chicken broth or a low sodium version.
