    How to make Mediterranean Diet Chicken Breast Kabobs

    Prep Time: 30 minutes (included marinating time) .
    Bake Time: 15 minutes .
    Servings: 6 .
    You will need six wooden skewers.

    1. Chicken. Then cut the chicken into one inch pieces and place them into a large bowl or large zip top bag.
    2. Marinade. In a small bowl, use a whisk to combine together your marinade ingredients and then coat the chicken, and refrigerate.
    3. Prepare. Soak your wooden skewers while you prep your remaining ingredients. Preheat your oven to 425.
    4. Vegetables. Slice your onion and peppers into one inch slices that are thick enough to hold up to the skewers.
    5. Layer. Layer your ingredients on you skewers leaving about two and half to three inches on the end of the skewers open.
    6. Bake. Bake for six minutes, rotate the kabobs, and continue to cook until the chicken has cooked through.
    7. Broil. Switch the heat to 'broil' and bake for another minute to two minutes to brown.
    8. Serve. Allow the kabobs to cool for a few minutes before serving.

    Tips for making the best chicken kabobs.

    Use chicken breasts that are the same thickness for more even baking. Also, cut the chicken into similar sized chunks to make your kabobs evenly sized.

    1. This recipe can be prepared in advance. You can thread the ingredients on to your skewers and then refrigerate them for up to a day in advance.
    2. The marinating process is essential to making this chicken both moist and flavorful. At a minimum, your chicken should be marinated for 20 minute in a refrigerator.
    3. After removing the chicken from the marinade, it is best to toss everything left in the bag to avoid a food poisoning issue.
    4. I like to double the marinade recipe so that I can have additional for serving the chicken with. Simply, mix the ingredients and then separate them so that half goes into the bag and the remainder gets refrigerated for later
    5. Your chicken is done cooking when a food thermometer indicates that your chicken has cooked to the 165 degrees. Also, the chicken should no longer be pink on the inside.
    6. This chicken tastes great when served over rice, in a pita or on top of a Greek salad!

    How to store leftover chicken kabobs.

    Once your chicken kabobs have fully cooled, they can be stored in an airtight container. When properly stored, leftovers can keep for up to five days refrigerated.

    • Rimmed Baking Sheet
    • Bowl

    Ingredients

    Kabobs.

    • 4 Chicken Breasts -- Skinless and boneless breasts.
    • 1 Onion --Red onion
    • 2 Peppers -- Colors of choice.

    Marinade

    • ⅓ cup Olive Oil.
    • 2 tbsp Lemon Juice.
    • 2 cloves Garlic. --Minced.
    • ½ tbsp Greek Seasoning.

    Instructions

    • Chicken. Start by using a clean paper towel to pat your chicken dry. Then cut the chicken into one inch pieces and place them into a large bowl or zip top bag.
    • Marinade. In a small bowl, use a whisk to combine together your marinade ingredients. Then transfer the marinade to your zip top bag with the chicken, seal the bag, toss the bag to coat the chicken, and refrigerate the ingredients for at least 20 minutes.
    • Prepare. Place your wooden skewers in a glass of water to soak while you prep your remaining ingredients. Then line a rimmed baking sheet with foil (you can spray it with nonstick) and preheat your oven to 425.
    • Vegetables. Slice your onion and peppers into one inch slices that are thick enough to hold up to the skewers.
    • Layer. Once your chicken is done marinating you can thread your skewers. Start by placing a chicken piece on to the skewer and then add your onion and pepper slices, repeating the process leaving about two and half to three inches on the end of the skewers open.
    • Bake. Place the skewers on to your baking sheet and then place the baking sheet on the top rack of your oven. Bake for six minutes, rotate the kabobs, and continue to cook until the chicken has cooked through.
    • Broil. To get more of a 'grilled' look, switch the heat to 'broil' and bake for another minute to two minutes to brown.
    • Serve. Allow the kabobs to cool for a few minutes before serving.
