    Ingredients needed to make bruschetta topped chicken.

    For the bruschetta.

    • Cherry Tomatoes. Firm tomatoes that have been sliced in half.
    • Basil. Fresh basil that has been chopped fine.
    • Olive Oil. Avocado oil can alternatively be used.
    • Garlic. Your garlic should be minced.
    • Seasonings. Ground Black Pepper and Kosher Salt.

    For the chicken.

    • Chicken. Boneless, skinless chicken breasts.
    • Olive Oil. For the marinade.
    • Italian Seasoning. You can use the seasoning of your choice.
    • Other Seasonings. Garlic Powder, Kosher Salt, and Ground Black Pepper.
    • Balsamic Glaze. This is what is commonly used for bruschetta.

    Expert Tip 👉 Balsamic glaze can be made using one cup of balsamic vinegar and a quarter cup of brown sugar. Bring the ingredients to a boil over medium heat, stirring constantly, until the sugar has dissolved. Then reduce the heat to low and simmer until the glaze is reduced in half (about 18-20 minutes). Allow the glaze to cool before using it.

    How to make Mediterranean Diet Grilled Bruschetta Chicken

    Prep Time: 10 minutes .
    Grill Time: 25 minutes .
    Servings: 4 servings .

    Notes: It is a good idea to use a thermometer to measure the internal temperature of your chicken.


    1. Prepare. Prepare your ingredients as indicated. Prep your grill as desired or needed. Preheat the grill to 450F (high heat).
    2. Bruschetta To make your bruschetta by combining the ingredients together in a medium bowl. Then refrigerate the mixture as you work so that the flavors can meld together.
    3. Marinade. In a small bowl, use a small whisk or fork to combine together the Italian seasoning, garlic powder, kosher salt and pepper. Use a pastry brush or similar item to brush the chicken with your olive oil on both sides. Then sprinkle the seasoning blend on top of the chicken on both sides.
    4. Cook. Carefully place your prepared chicken on your grill. Grill the chicken breasts (with the lid closed) for approximately 20 minutes, flipping the chicken halfway through grilling. Then transfer the cooked chicken to a clean plate and allow it to rest for about 10 minutes.
    5. Serve. To serve your chicken, spoon the bruschetta over the grilled chicken and then drizzle it with balsamic glaze. Serve immediately!

    Select chicken breasts that are a similar size and thickness. This will allow the chicken to cook at the same rate.

    1. Using a clean paper towel to pat the chicken with before brushing the oil on it will help keep the chicken moist from the oil and flavorful from the seasonings.
    2. Your chicken is done cooking when it has reached an internal temperature of 165 degrees F.
    3. My chicken was cooked on an outdoor gas grill. Cooking times can vary depending on the kind of grill you are using. This is why it is best to use a thermometer to check the internal temperature.
