You can make this recipe even easier to make by purchasing skinless chicken breast that has already been cut up.

- Chickpeas are used in this recipe. It is easiest to simply use canned chickpeas that have been drained and rinsed.

This slow cooker Mediterranean diet recipe features tender chicken infused with savory and aromatic flavors of the vegetables, herbs, and seasonings. To make this recipe we will simply add the ingredients to a slow cooker and then allow the ingredients to cook and blend together.
How to serve this slow cooker chicken breast.
- Serve this recipe as is with a glass of white wine or lemonade on the side.
- Add a spoonful or two to a wrap and serve this with a bowl of soup are enjoy it the next day for lunch.
- Place a spoonful or two on top of bowl of greens for a delicious salad.
Ingredients needed to make slow cooker chicken breast.
- Chicken Breast. Use skinless chicken breast that has been properly cut into bite sized pieces.
- Chickpeas. Canned chickpeas work well in this recipe. They should however be drained before adding them to this recipe.
- Diced Tomatoes. Keep the liquid with the tomatoes as it is important to the flavor of this dish.
- Artichoke Hearts. I like the canned quartered artichoke hearts in this recipe. Drain the artichokes first however before adding them to the slow cooker.
- Onion. My chicken was made with a red onion. The onion should be sliced thin.
- Red Bell Pepper. Chop this into small pieces.
- Kalamata Olives. Remove the pits and slice these in half.
- Garlic. Minced or chopped small.
- Seasonings used in this recipe: ground turmeric, ground coriander, Italian seasoning, salt, ground ginger, ground cumin, black pepper, and cayenne pepper.
- Water or Chicken Broth . This is needed to keep the chicken and ingredients moist.
- Israeli or pearl couscous Quinoa or cauliflower rice can be used with adjustments to cooking time as needed.
- Baby Spinach This should be chopped. Nori can also be used.
- Optional, crumbled feta. This can be sprinkled on top before serving.
Expert Tip👉 This recipe has a lot of different kinds of seasoning which are needed for flavor and for appearance. You can however omit or adjust the seasonings as needed to your tastes.
How to make Slow Cooker Mediterranean Diet Chicken
Prep: 30 minutes
Yield: 8 servings
- Prepare your slow cooker as needed for nonstick. Using a spray or slow cooker liner can work.
- Place everything except for the couscous, spinach and feta cheese inside of the slow cooker. The couscous is added later on and the other ingredients are added just before serving.
- Cover the slow cooker and cook on low for six hours. Then, stir in the couscous and continue to cook until the liquid is absorbed.
- When you are ready to serve this dish, simply stir in the spinach.
- Top with the crumbled cheese and serve.
