Ingredients needed to make easy honey mustard chicken.
- Chicken Breasts . Your chicken breasts should be sliced in half lengthways.
- Flour. A small amount of flour is used to seal to help brown the outside of the chicken. Whole wheat flour can be used.
- Seasonings. Salt and pepper were used to make my chicken.
- Olive Oil. For cooking the chicken breasts.
- Garlic. Your garlic should be finely chopped or minced.
- Greek Yogurt. This adds the creamy texture to the sauce.
- Chicken Stock. A low sodium chicken stock can be used.
- Dijon Mustard. Any kind of dijon mustard can be used ( I like the course ground kind too in this recipe).
- Honey. I find that fresh honey is easiest to work with.
- Garnish- fresh parsley was used to garnish my chicken.

Tips for making the best Honey Mustard Chicken
Two large skinless chicken breasts were used to make my chicken. If you are using smaller chicken breasts, you can use four breasts that are left whole (not sliced).

- Not a fan of chicken breasts? The chicken breasts can also be substituted with skinless and boneless chicken thighs.
- Use a good quality extra virgin olive oil or your preferred frying oil.
- Depending on the size of your skillet, you may need to brown your chicken in batches if necessary to avoid overcrowding the skillet.
- You do not have to clean the skillet between frying the chicken and making the sauce. Those bits on the bottom of the skillet will add flavor to the sauce.
- Greek yogurt (plain) is used instead of the usual heavy cream in this recipe. For a creamier sauce, use a full fat Greek yogurt or you can mix it with heavy cream. For a lower fat and less creamy sauce, you can use a lower fat Greek yogurt.
- Not a fan of chicken stock? You can use vegetable stock or the stock of your choice.
How to make Mediterranean Diet Honey Mustard Chicken
Prep Time: 10 minutes .
Cook Time:15 minutes .

- If you have not done so, prepare your chicken as indicated. Then place the chicken into a large zip top bag.
- In a small bowl, use a fork or a whisk to combine together the flour and seasonings. Then add these dry ingredients to the bag with the chicken.
- Seal the bag and then shake or rotate the bag so that the chicken becomes coated with the dry ingredients.
- In a large skillet, heat your olive oil on medium high heat for one minute.
- Add the chicken to the skillet and cook until the turn golden brown on each side (about four minutes per side image 2). Remove the chicken from the skillet.
- Next, add the garlic to the skillet and cook until fragrant (about a minute). Then add the yogurt to the skillet along with the stock, mustard, and honey. Use a wooden spoon to stir the ingredients and gently scrape the chicken residue from the bottom as you cook the sauce.
- When your sauce begins to bubble you can place the chicken back into the skillet (image 3).
- Cover the skillet and cook for another five minutes or until the chicken is cooked through.
Expert Tip 👉 According the the FDA, chicken is cooked through when a thermometer inserted into the center reaches 165 degrees. The juices from the chicken should also be clear and the meat no longer pink.
How to store leftover chicken.
Once this chicken has fully cooled, it should be stored in an airtight container.
When properly stored, honey mustard should keep for for up to four days when refrigerated. Freezing does not work well as the sauce ingredients tend to separate.
