If you choose to leave the skins on your potatoes, I suggest cleaning the potatoes getting rid of any dirt or anything that may not be good that is one the skin (I soak and scrub mine). As far as slicing your potatoes, for most potatoes, slice the them into quarters while larger potatoes will probably need to be sliced up into more pieces to get a good size.
The ingredients needed for Mediterranean Diet Friendly Roasted Potatoes/
- Potatoes- 8 small (such as red potatoes) or 4 larger (such as Yukon gold). Clean your potatoes and quarter them.
- Olive Oil- ½ cup.
- Garlic- 2 cloves minced or chopped.
- Seasonings- 3 tablespoons total. A good cheat is to use Mediterranean Diet Seasoning Blend or a Greek Seasoning Blend. Other options include Italian Seasonings, chopped parsley, Salt, and/or Pepper.
How to roast potatoes.
- Preheat your oven to 400. You will need a large rimmed baking sheet or roasting pan. Giving the sheet or pan a light coating of nonstick may be a good idea to make clean up a bit easier to do.
- Place your sliced potatoes in a large bowl.
- In a medium mixing bowl, use a whisk or a fork to combine the olive oil, garlic, and seasonings. Then pour this mixture over the potatoes, tossing the potatoes as your pour. Continue to toss the potatoes until they are well covered.
- Spread the potatoes evenly on the baking sheet or roasting pan.
- Roast for 45-50 minutes (size of potatoes will make a difference) or until they are begin to brown and become crisp. You will need to flip the potatoes every 15-20 minutes to allow them to bake evenly as well.
