Ingredients needed to make Mediterranean Diet Vegan Chocolate Cookies
- Almond Meal- 1 cup.
- Baking Soda- 1 teaspoon.
- Baking Powder- 1 teaspoon.
- Salt- ¼ teaspoon.
- Black Beans- 1 ½ cups cooked and cooled.
- Canola Oil- ¼ cup.
- Agave Nectar- ½ cup. You can use maple syrup instead.
- Unsweetened Cocoa Powder- ½ cup
- Lemon Juice- 1 teaspoon.
- Dark Chocolate Chips- ½ cup.
How to make Mediterranean Diet Vegan Chocolate Cookies
- Preheat the oven to 350 and prep a baking sheet with parchment paper.
- In a medium mixing bowl, use a whisk or a fork to blend together the almond meal, baking soda, baking powder, and the salt.
- Next, use a food processor or strong blender to blend together the black beans, canola oil, agave, unsweetened cocoa powder, and lemon juice.
- Transfer the contents from the food processor to a mixing bowl and stir in the dry ingredients from the first bowl. Then fold in the chocolate chips.
- Use a scoop to scoop the batter into small balls to place on to the prepped cookie sheet. Add additional chocolate chips to the tops of the cookies if desired.
- Bake these cookies for 15 minutes or until they are done baking. When they are done they will still be soft. If unsure, try moving a cookie and if it feels like it is holding its shape then they are done. Allow the cookies to sit on the baking sheet for a few minutes before removing.
