Ingredients needed to make oatmeal chocolate chip bars.
- Oats. Rolled or Old Fashioned oats work well for a chewy consistency. Gluten free folks should make sure that their oats are gluten free.
- Ground Cinnamon. A small amount of cinnamon really adds to the flavor of this bar.
- Dried Fruit. This is optional but, they do add a touch of color and flavor. My bars were made with dried cranberries. Raisins will also work.
- Peanut Butter. I like a creamy peanut butter for better blending. No added sugar is preferred as we are adding maple syrup to the bars.
- Maple Syrup. A perfect natural sweetener for vegan diet followers. Note that maple syrup measures differently from other sweeteners if you are looking for a swap.
- Chocolate Chips. Use vegan chocolate chips. Dark chocolate chips were used to make my bars.

Tips for making the best no bake chocolate oat bars.
Rolled oats are larger than quick oats and tend to make bars more chewy. For a less chewy oat bar, try subbing in quick oats for part of the rolled oats.

- You can use another nut butter, such as almond butter, if you are not a fan of peanut butter. Seed butters, suc has sunflower seed butter, can also be used in this recipe.
- Stirring in a teaspoon or two of unsweetened cocoa powder can give you a chocolate oat bar.
- Adding a half cup of chopped nuts will add a nice crunchy element to your bars.
- Adding a half tablespoon of coconut oil can make your bars easier to bite into and chew.
- The peanut butter and maple syrup are heated together to form the grip that will hold the ingredients together. You can use a microwave instead of the stove top method to do this.
- Line your baking pan with parchment paper that overhangs the sides of the pan. This will make it easier for you to lift the bars out of the pan for slicing.
- Your oat bars should be fully cooled and set before slicing.
How to make No Bake Chocolate Chip Oat Bars
Prep Time: 10 minutes .
Set Time: up to two hours. .
Servings: 18 bars .
- Line a square baking pan with parchment paper. My pan was lined with two large strips of parchment paper, one horizontal and one vertical.
- Use a whisk to combine together your oats, fruit, and cinnamon in a large mixing bowl.
- In a medium sized saucepan on medium heat, combined together the peanut butter and maple syrup. Stir or whisk the heating ingredients until they are combined, smooth, and have darkened (about six to seven minutes).
- Remove the saucepan from the heat and carefully pour the warm ingredients over the ingredients that you placed into your large mixing bowl (oats etc.) Use a rubber spatula or similar item to stir or fold the ingredients until the oats are well covered with the warmed ingredients. Then fold in your chocolate chips and any optional add-ins such as chopped nuts.
- Transfer the ingredients to your prepared baking pan and evenly press the mixture into place. You can then press in additional chocolate chips if desired (some of your previously added chips may have somewhat melted.).
- Refrigerate your bars until set (about an hour). Then use the parchment paper to lift the bars out of the pan to slice into servings.
Expert Tip 👉 An 8X8" bar was used to make my bars. To make thinner but, more bars you can use a larger square pan. For thicker bars, use a smaller pan.
How to store oat bars.
Once they have fully cooled, your bars can be stored in an airtight container. When properly stored, these bars should keep for up to a week and a half refrigerated or a couple of months when frozen.
