Simple Oven Roasted Tomato Tart recipe for the Mediterranean diet

This is a wonderful recipe that allows us to embrace the flavor of tomatoes in kind of a pie form.
I like how perfect this recipe is for folks like myself who have an abundance of delicious tomatoes growing in the garden.

This recipe works especially well for anyone who made my Margherita Flatbread Pizza.

Both recipes are easy and tasty alternatives to the standard pizza as well as being friendly to tme Mediterranean diet. However, this tomato tart recipe features what I would call a ‘fancy’ crust thanks to its French influence.

Everyone probably wants to know what is the difference between a tart and a pie, or pizza pie.

In the case of this recipe for a tomato tart, it sure looks like a pizza. I mean, there are tomatoes and cheese on top of a crust of some sort.

However, technically, there is a difference between a tomato pie and a tomato tart.

The biggest difference between the two really lies in the crust. While a pizza is known for its yeast and flour based crust, a tart is made with a crust that resembles more of a pie.

You are probably also wondering why they call it a tart.

Let me first tell you that there is a ‘French’ heritage to this crust and the French like their pies (more specifically pastry). Because of the crust in this recipe resembling a pie, we call this a tart and thus, not a pie.

Here is the good news about this recipe being a ‘tart’ and not a ‘pizza’.

You can use a pre-made pie crust or if you are feeling fancy, you can use a frozen puff pastry or phyllo crust. Strict Mediterranean diet followers will need to use a crust that is not made with all of that butter or fat such as my Butternut Squash Crust or my Mediterranean diet whole wheat pizza crust (technically not tart crusts).

Tips Oven Roasted Tomato Tart

So I just mentioned that the easiest way to make this recipe is to use a frozen puff pastry or phyllo crust. However, because both of these rely upon using fat such as butter, strict Mediterranean diet followers can use a crust that is not made with all of that butter or fat such as my Butternut Squash Crust or my Mediterranean diet whole wheat pizza crust (technically not tart crusts).

Here are some more great tips for you.

  1. This recipe can be made in a tart pan with a removable bottom, pie plate, or on a sheet pan that has been prepped for nonstick (such as parchment paper).
  2. The crust on this needs to be pre-baked. If you are not using a pastry crust then I suggest that you weigh the crust down while it bakes to prevent it from puffing up. You can use an additional sheet pan placed on top (sandwich the crust between two sheet pans basically), a sheet of foil with dried beans on top, or even pie weights to do this. If you are using pre made pastry dough, a double sheet of heavy foil should work.
  3. There is no sauce needed in this recipe. But, you could easily top your pizza with drizzled olive oil, pesto , or even a bit of Dijon mustard.

Here is how to prepare the Tomatoes for this tomato tart recipe.

First off, I need to mention the best kind of tomatoes to use in this recipe.
I suggest a smaller yet, more flavorful tomato rather than something large with a lot of juice in it. Tomatoes that work well in this recipe include plum (Roma) tomatoes and cheery tomatoes.

Choose a tomato that both fits well into the size and shape of your pan as well as adding flavor and color.
Firmer tomatoes work the best in this recipe. To prepare the tomatoes, wash them and then slice them into thin slices, remove as much liquid as you can.

Using a pre-made crust is the easiest way to make this recipe.

The Ingredients Needed to Make this Roasted Tomato Tart.

  • Tomatoes- 2 pounds. The amount of tomatoes that you will need to use will really depend upon the variety that you are using and how thin you intend to slice them.
  • Olive oil– ½ cup divided.
  • Garlic– 3 cloves minced.
  • Seasonings- 1 to 2 tablespoons.This can include Italian Seasonings, Salt, and/or Pepper.
  • Crust- 1. Use a frozen puff pastry or phyllo crust. However, because both of these rely upon using fat such as butter, strict Mediterranean diet followers can use a crust that is not made with all of that butter or fat such as my Butternut Squash Crust or my Mediterranean diet whole wheat pizza crust (technically not tart crusts).
  • Optional- Cheese- ½ cup. Grated or shredded. Cheeses such as Parmesan, Mozzarella, or even Gruyere or a mixture.
  • Optional- for the crust or topping. Prepare or top your pizza with drizzled olive oil, pesto , or even a bit of Dijon mustard. I also have a recipe for How to Make Homemade Mayonnaise that is Mediterranean Diet friendly.

Oven Roasted Tomatoes needed for this Tart

  • Prepare your tomatoes by slicing them ¼″ or less in thickness. Remove as much liquid as possible.
  • We will start this recipe by first roasting the tomatoes. Skip this event if you do not want your tomatoes roasted first.
  • Preheat your oven to 450 and prep a rimmed baking sheet for non-stick.
  • In a medium bowl, whisk or mix together using a fork, the olive oil, garlic, and seasoning. Then toss the tomato slices in the oil mixture. Use a fork to remove each individual tomato slice, allowing the excess oil to drip off back into the bowl. Then place the tomato slice on to the prepped pan. We will use the remaining oil for the tart.
  • Roast the tomatoes for 45-50 minutes or until the the tomatoes begin to brown, flipping them as needed. Allow the tomatoes to cool before proceeding with the recipe.

How to make the tomato tart.

  • Prepare the crust as indicated on the directions suing the baking dish or pan you will use to make your tart. Baking times and preparation will vary depending on the kind of crust that you are using. However, please make sure that you roll out or press your crust so that is is a bit larger than what you are using to bake it in to form a crust.
  • Brush the remaining oil over the crust and then arrange the remaining ingredients over that. Feel free to add additional olive oil or one of the suggested alternative ingredients instead over the crust before you place the tomatoes on top. Drizzle additional olive oil on top as desired.
  • Bake until the tart is browned- about 20-25 minutes. You can sprinkle additional seasonings or olive oil on top before serving.
