Pasta with Avocado and Spinach Sauce

This is a delicious and healthier way to enjoy a pasta dish if you were to ask for my opinion.
Of course, I am always excited to use avocadoes in creative ways such as they are used in this recipe.

Did you try my Vegetarian Pasta Carbonara recipe?

That recipe is for a Mediterranean diet friendly version of a popular pasta dish.
This recipe is really more about the sauce thanks to the creative use of ingredients.

This recipe is for anyone asking what can I do with lots of spinach.

Spinach is a leafy vegetable that can also be used in other recipes.
I love that spinach can be part of a salad, baked in a muffin, or made into a sauce.

In this recipe the avocado is part of the sauce.

Not only will the spinach give color and flavor to this recipe, it will also provide some texture to this recipe. Spinach is a source for potassium, protein, calcium, iron and so much more!

This recipe is also for anyone asking how do you make avocado dip or sauce from scratch.

Yes, this recipe is for a sauce and not for a dip.
However, adjusting a few ingredients and adding some Greek yogurt really can make the sauce into a great tasting dip!

This recipe for avocado sauce is actually quite simple in both ingredients and process.

You can easily make this recipe in a blender or food processor.
Also, you can add a bit of Greek Yogurt to make the sauce more creamy, kind of like a dip.

Tips for making pasta sauce.

I mentioned above that this sauce can be made even more creamy by adding a bit of Greek Yogurt to achieve your desired consistency. Also mentioned was that this recipe can be made in a blender or food processor.

Here are some more great tips for you.

  1. This recipe can be served warm or cold. Feel free to serve the sauce with leftover pasta.
  2. Because this is a thicker sauce, it works best with larger noodles. I like fettucine for this recipe because of its shape and size.
  3. For best results, use avocados that are really ripe as they will be easier to make in a sauce. I have seen avocado cups at the grocery store that are just avocado meat that has been packaged.

How to clean spinach.

We are using raw spinach leaves in this recipe.
Raw spinach tends to be gritty and dirty with sand.

I soak my spinach in cold water using a large bowl.

Swish the spinach around to help loosen the dirt off.
Then rinse the spinach in cold water and allow it to dry.

This is for anyone asking does avocado sauce turn brown.

Yes, it is best to serve this sauce when it is freshly made.
However, because we are adding lemon juice, we can help prevent a lot of that browining.

Ingredients needed to make Creamy Spinach Avocado Pasta.

  • Pasta-10 to 12 ounces prepared according to the instructions. The pasta that you use can be refrigerated (leftovers?) or served warm. Also, if you save a bit of the water that the pasta was cooked in, you can use it to thin out the sauce if needed.
  • Spinach- 1 cup. Use fresh spinach that has been washed with the stems removed. The spinach should be steamed for one to two minutes until softened but, not cooked. I do this using a steam basket over the pasta while it is boiling 🙂 .
  • Garlic– 1 clove chopped.
  • Avocado- 2 medium with the skin and pit removed.
  • Walnuts– ½ cup
  • Lemon Juice– 1 tablespoon.
  • Olive Oil– ÂĽ cup.
  • Seasonings to taste. This can include Italian Seasonings, Salt, and/or Pepper. Or you can use a Mediterranean Diet Seasoning Blend.
  • Optional- Greek Yogurt to thicken or water or additional oil to thin the sauce.

How to make Pasta with Avocado and Spinach Sauce

  • Prepare the pasta as indicated in its directions. Also, make sure that you spinach has been cleaned and the skin and pits have been removed from the avocadoes.
  • Give the spinach a quick steam to warm it without cooking it. You can steam it, as described in the ingredient section of this recipe. We are simply trying to soften the spinach leaves up a bit.
  • In a blender or food processor, combine together the spinach (cooled), garlic, avocado, walnuts, lemon juice, and oil. Blend until just combined and then add seasonings as desired. If your sauce is too thick you can thin it out with water or oil However, adding a bit of Greek Yogurt can thicken it up. Blend as needed.
  • Combine the sauce with the pasta and serve with optional tomatoes, vegan cheese, Nutritional Yeast, or even real cheese if desired.
