I mentioned above that for best results, use avocados that are really ripe as they will be easier to make in a sauce. I have seen avocado cups at the grocery store that are just avocado meat that has been packaged.

I like fettucine for this recipe because of its shape and size. Feel free to use your favorite noodles for this pasta sauce.
Ingredients needed to make Creamy Spinach Avocado Pasta.
- Pasta-10 to 12 ounces prepared according to the instructions. The pasta that you use can be refrigerated (leftovers?) or served warm. Also, if you save a bit of the water that the pasta was cooked in, you can use it to thin out the sauce if needed.
- Spinach- 1 cup. Use fresh spinach that has been washed with the stems removed. The spinach should be steamed for one to two minutes until softened but, not cooked. I do this using a steam basket over the pasta while it is boiling 🙂 .
- Garlic- 1 clove chopped.
- Avocado- 2 medium with the skin and pit removed.
- Walnuts- ½ cup
- Lemon Juice- 1 tablespoon.
- Olive Oil- ÂĽ cup.
- Seasonings to taste. This can include Italian Seasonings, Salt, and/or Pepper. Or you can use a Mediterranean Diet Seasoning Blend.
- Optional- Greek Yogurt to thicken or water or additional oil to thin the sauce.
How to make Pasta with Avocado and Spinach Sauce
- Prepare the pasta as indicated in its directions. Also, make sure that you spinach has been cleaned and the skin and pits have been removed from the avocadoes.
- Give the spinach a quick steam to warm it without cooking it. You can steam it, as described in the ingredient section of this recipe. We are simply trying to soften the spinach leaves up a bit.
- In a blender or food processor, combine together the spinach (cooled), garlic, avocado, walnuts, lemon juice, and oil. Blend until just combined and then add seasonings as desired. If your sauce is too thick you can thin it out with water or oil However, adding a bit of Greek Yogurt can thicken it up. Blend as needed.
- Combine the sauce with the pasta and serve with optional tomatoes, vegan cheese, Nutritional Yeast, or even real cheese if desired.
