    Ingredients needed to make Brussels Sprouts Tater Tots

    • Brussels Sprouts- 10 ounces. The stems should be removed and the sprouts should be rinsed.
    • Potatoes- 2 medium sized. Round white potatoes work well as they can be mashed and hold some shape.
    • Garlic- 3 cloves sliced.
    • Shallots-2, chopped. Sweet onions (about ½) are a good alternative.
    • Small Red Bell Pepper- 1, chopped with seeds and stem removed.
    • Smoked Paprika- 1 teaspoon.
    • Olive Oil- 1 tablespoon.
    • Seasonings to taste. This can include Italian Seasonings, Salt, and/or Pepper. Other options include Mediterranean Diet Seasoning Blend or a Greek Seasoning Blend.

    How to make vegan tots.

    • Remove the stems from the sprouts and rinse the sprouts in cold water. Allow the sprouts to drain then pat them dry. Then grate the sprouts.
    • Place the potatoes in a pot and cover with water. You can add a bit of salt if desired. Bring the potatoes to a boil then simmer at medium-low heat, covered, until tender ( 15-20 minutes). Drain the potatoes and transfer them to a large mixing bowl. Use a potato masher or hand blender to mash the potatoes.
    • Preheat your oven to 350 and prep a rimmed baking sheet for nonstick.
    • In a large pan on medium-low heat, sauté the garlic in the olive oil until fragrant (about three minutes). Then add the shallots and red pepper and sauté for another five minutes, stirring continually.
    • Transfer the grated sprouts to the large bowl with the potatoes and then add the sauteed ingredients to that bowl. Blend the ingredients with a large spoon.
    • Use your hands to form the tots using the ingredients in the bowl. Then transfer the tots to the prepped baking sheets.
    • Bake the tots for 20 minutes or until the edges begin to brown. The flip the tots over and continue to bake until done- about 10 minutes.
    • Serve with dipping sauce (see recipe above).
