About this recipe for homemade granola bars.
This is a no-bake recipe for homemade granola bars.
However, vegan diet friendly ingredients are used to also make these tasty bars.
These granola bars taste like natural sweetened treat because they are made with healthier ingredients.
We are using maple syrup to both sweeten and help bind the ingredients together.
Also included in this recipe are both quick and rolled oats.
Ingredients needed to make vegan granola bars.
- Rolled Oats- ½ cup.
- Quick Oats- 1 ½ cups.
- Maple Syrup- ½ cup.
- Coconut Oil- 1 tablespoon.
- Nut Butter- ½ cup. This can be peanut butter, almond butter, or cashew butter. Please use a vegan-friendly nut butter that has no added sugar.
- Chocolate Chips- ½ cup. Unsweetened and vegan chocolate chips preferred.
- Vanilla Extract= 1 teaspoon.
- Cinnamon- 1 teaspoon.
- Shredded Coconut- ½ cup.
- Almonds- ½ cup- sliced in half.

How to make Vegan Chocolate Granola Bars.
- Start by prepping a square baking dish with parchment paper that overhangs the the sides of the dish.
- In a medium sized bowl, use a fork to combine together the two kinds of oats.
- Next, in a medium sized saucepan on medium heat, combine together the maple syrup, coconut oil, and nut butter. Use a whisk or similar tool to stir the ingredients as they melt and blend together. Once the ingredients have blended together, remove the pan from the heat and stir in the chocolate chips.
- Once the chocolate chips have blended into the combined ingredients you can stir in the shredded coconut, vanilla extract, ground cinnamon, and almonds.
- Use a rubber spatula to fold in the oats. I suggest however, that you add half of the oats at a time, stirring between the addition. Once the oats have been worked through evenly in the mixture you can also transfer the mixture to the prepared baking dish and press it in using the back of a large spoon or rubber spatula. However, feel free to sprinkle additional coconut on top.
- Finally, refrigerate your granola bars until set- about a half hour. Then you can use the parchment paper that overhangs the sides to lift the bars from the pan and next cut into servings.
