    Minestrone soup is hearty enough to eat as a meal in itself. However, it also pairs well when served with a sandwich, salad, or even Pizza Babka Twist Bread (Vegan).

    Minestrone soup ingredients.

    • Olive Oil. Used to saute vegetables brown without burning them.
    • Yellow Onion. The onion should be chopped or diced.
    • Carrots. Your carrots should be peeled and the chopped.
    • Celery. Also should be chopped.
    • Tomato Paste. A small amount of tomato paste helps to give this soup a rich texture and flavor.
    • Garlic. Use freshly minced garlic for optimal flavor.
    • Broth. Most any kind of broth can work in a minestrone soup recipe however, vegetable broth keeps this vegetarian/vegan. You can find lower sodium broth here.
    • Chickpeas. This is added for a protein element.
    • Great Northern Beans. While this is the preferred bea, you can use kidney beans, pinto beans, or cannellini beans.
    • Tomatoes. The tomatoes should be diced. You can find canned diced tomatoes here.
    • Seasonings. Italian seasonings work great in this recipe and were used in my soup.
    • Dried Bay Leaf Bay leaf adds depth of flavor to the soup. You can omit it however if desired.
    • Pasta. Ditalini pasta is the perfect size and shape for this soup. Elbow macaroni or a similar sized pasta can also be used.

    Tips for making the best minestrone soup.

    The pasta is actually cooked in the soup itself. You can however pre-cook the pasta to al dente and add the pasta to the soup when serving to help it keep its texture.

    2. If the soup gets too thick from heating, simple add additional broth or water.

    1. Saute the vegetables.
    2. Add the tomato paste.
    3. Stir in the broth, chickpeas, beans, tomatoes, and seasonings.
    4. Bring the soup to a boil.
    5. Add the pasta.
    6. Serve the soup!

    Expert Tip 👉 Make this soup in a slow cooker or crock pot. This soup can be cooked for six to eight hours on low or three to four hours on high. Stir the ingredients occasionally while they cook.

    How to store minestrone soup.

    Once the soup has been full cooled it should be stored in an airtight container. When properly stored, this soup should keep for up to five days refrigerated or frozen for up to a few months. I would store it without the pasta however to keep the structure of the pasta intact.

    Equipment

    • Pot - large pot or Dutch Oven
    • Ladle

    Ingredients

    • 2 tbsp Olive Oil
    • 1 cup Onion - chopped or diced, about one medium onion
    • 1 cup Carrots - about two carrots peeled and chopped
    • 1 cup Celery - about two, chopped.
    • 1 tbsp Tomato Paste
    • 2 tsp Garlic - minced
    • 4 cups Vegetable Broth
    • 15 oz Chickpeas
    • 14 oz Great Northern Beans
    • 2 cups Tomatoes -diced, can use canned.
    • 1 tsp Seasonings - Italian seasonings and optional bay leaf
    • 1 cup Ditalini Pasta

    Instructions

    • Heat the olive oil in a large saucepan or Dutch oven for one minutes. Then add the onion and the garlic and stir for one minutes before adding the celery and carrots.
      Cook the ingredients until the vegetables are soft and the onion and garlic are translucent (about 5 minutes) stirring occasionally.
    • Stir in the tomato paste cook for one minute.
    • Add in the broth, chickpeas, beans, tomatoes, Italian seasoning and bay leaf to the pot and bump up the heat to high to bring the soup to a boil. Be sure to keep an eye on the soup and stir occasionally as needed.
    • Once the soup begins to boil, you can add the pasta and cook according to the directions on the box (usually about 8 minutes).
    • Carefully remove the soup from the heat and remove the bay leaf before serving.
