    If you have seen my recipe for Honey Roasted Carrots then you can probably guess how much I like that taste of carrots with honey. When we put the combination of honey and carrots into a bread then we get something even better.

    The truth is that honey is a great alternative to sugar in this recipe.

    Honey is a great alternative to sugar for many reasons. I like that there are so many reasons to eat honey too!

    The experts tell us that there are a lot of health benefits related to honey.

    Honey contains antioxidants including flavonoids. There are researchers who associate flavonoids with helping to prevent heart disease and cancer among other ailments.

    Here are a more reasons to use honey to sweeten our food.
    Since honey is sweeter than sugar, less of it is needed in a recipe. Also, honey seems to raise blood sugar levels slower than sugar, according to some experts.

    There are also some benefits to using whole wheat flour rather than the regular all purpose flour.

    Whole wheat flour has more nutrients in it as well as flour. I like that whole wheat flour has more protein and is easier for me to digest.

    Whole wheat flour is friendly to the Mediterranean diet.
    As you may already know, the Mediterranean diet likes high fiber and whole grains.
    Whole wheat flour is just one example of this.

    Tips for making Whole Wheat Carrot Bread.

    I already mentioned that we will be sweetening this bread with honey. Since honey is sweeter than sugar, less of it is needed in a recipe.

    Here are some more helpful tips for you.

    1. You can easily swap out the carrots in this recipe with zucchini. Doing so will make for a great tasting zucchini honey bread instead.
    2. This recipe can also be used to make whole wheat carrot muffins instead of whole wheat carrot bread.
    3. Making this recipe with a whole wheat pastry flour instead of regular whole wheat flour will yield a softer bread. This is especially nice if you do not care for the density of whole wheat flour or if you are making muffins. However, there is less protein in whole wheat pastry flour because it is made from a softer wheat.
    4. This bread should keep well. I like to wrap it in plastic and store in my fridge. You can alternatively freeze yours for later use.

    I have also added brown sugar to this recipe.

    Personally, I am not a big fan of brown sugar. However, the molasses color and taste that is used to make brown sugar is important to the taste of the brown sugar.

    There are alternatives that you can try for the brown sugar.

    Please choose a brown sugar alternative that is not in liquid form. While your results may not be 100% the same as the recipe makes, you should still have a decent tasting bread.

    Adding nuts to your bread is also an option.

    Chopped walnuts are always popular in a bread like this one. However, I must admit that these days I seem to be adding chia or flax seeds to every bread that I make.

    Whole Wheat Carrot Bread ingredients.

    • Whole Wheat Flour- 3 cups. Making this recipe with a whole wheat pastry flour instead of regular whole wheat flour will yield a softer bread. This is especially nice if you do not care for the density of whole wheat flour or if you are making muffins.
    • Ground Cinnamon- 1 ½ teaspoons.
    • Nutmeg- ½ teaspoon.
    • Baking Powder- 1 teaspoon.
    • Baking Soda- 1 teaspoon.
    • Eggs- 3 beaten
    • Honey- ½ cup.
    • Brown Sugar- ¼ cup. You can sub in an alternative to brown sugar. Please choose a brown sugar alternative that is not in liquid form for best results..
    • Oil- ½ cup. Can sub in apple sauce. Suitable oil choices include sunflower, canola, peanut, avocado, or coconut oil.
    • Vanilla Extract- 1 teaspoon.
    • Carrots- 2 cups grated.
    • Optional- Walnuts or Raisins - ½ cup
    • Optional- Yogurt or Milk tablespoon or needed if you batter seems dry. The moistness of the batter can be affected by how much liquid is in your carrots as well as any alternatives that you may have used in your dry ingredients.

    Here is how to make Whole Wheat Carrot Bread.

    • Preheat your oven to 350. Prepa loaf pan well for nonstick.
    • In a mixing bowl , use a whisk or forf to blend together the flour, cinnamon, nutmeg, baking powder and baking soda.
    • Next, in a large mixing bowl, beat together the eggs, honey, brown sugar (or alternative), and oil.
    • For the next step we will add the dry ingredients from the first bowl to the large mixing bowl. Then add the vanilla extract and mix until just blended.
    • Fold in the remaining ingredients. Those remaining ingredients will include the carrots and any optional raisins or nuts.
    • Bake for 50-65 minutes (will vary depending on any alternatives you may have added) or until your bread begins to brown. Then allow the bread to cool before removing from the pan.
