Soaking the dates in warm water is essential to the success of this recipe. The softened dates are used to make a smooth paste which is what will hold the other ingredients together (and make these bars yummy and chewy!).
Here are some more great tips for you.
- Line your pan with parchment paper that overhangs the sides of the pan. This will make it easy for you to life the bars out of the pan for cutting into servings.
- While this recipe works best with using dates, raisins can alternatively be used. You may need to make adjustments as needed for flavor and texture however.
- Lastly, it is important that you allow the bars to cool long enough to fully set. Otherwise, the bars will have difficulty holding together when sliced into servings.

This is a simple recipe made with just four ingredients. To make this recipe, we will first combine together softened dates with chopped nuts and coconut. Then we will top the bars with melted dark chocolate.

- Serve these bars as is as a snack with a glass of almond milk or flavored water.
- Individually wrap the bars for an on-the-go snack or for a team snack.

Ingredients needed to make this Coconut Date Bars Recipe.
- Medjool Dates. Used in this recipe for sweetening and as the binder to hold the other ingredients together. Your dates should be softened (if not fresh, simply soak for about five minutes in warm water and drained) and have their pits removed.
- Mixed Nuts. The nuts should be chopped. They offer that crunchiness to the texture as well as the salty flavor needed to balance out the sweet dates. Feel free to use the nut(s) of your choice.
- Shredded Coconut. Flaked coconut can alternatively be used.
- Dark Chocolate Chips. Used to top the bars in order to give an intense flavor that pairs well with the sweetness of the dates and nuttiness of the mixed nuts.
Optional ingredients👉 For added flavors, you can mix in cinnamon, nutmeg, mini chocolate chips, or sea salt.
How to make 4 Ingredient Date Bars
Makes 12 bars, depending on the size of the pan used.
Prep Time: 12 minutes.
- Line a rimmed baking pan or dish with parchment paper that overhangs the sides of the pan or dish. Select a pan or dish according to how thick or how many bars you intend to make.
- Make sure that you dates are soft, pitted and drained. Place the dates in your processor or blender. Give the blender or food processor a few quicks pulses to get the breakdown of the dates started.
- Add the chopped nuts to the blender or processor (leaving a few behind if desired for topping). Also add the coconut and process or blend until the mixture is blended and sticky with small pieces of nuts still visible.
- Transfer the ingredients to your prepared pan and evenly press the ingredients in place.
- Next, melt the chocolate according to the directions on the packaging. I like to melt mine in a microwave, stopping to stir every 20 seconds, until smooth. Stovetop melting on low is another option.
- If your melted chocolate needs smoothing, stir in a teaspoon or two of coconut oil as needed.
- Evenly spread the melted chocolate over the bars. You can add any desired toppings such as chopped nuts to the top as well at this point.
- Let the bars sit for ten minutes at room temperature and then place them into the refrigerator (about 25-30 minutes) or freeze ( about 15- 20 minutes) to fully set.
- To slice the bars into servings, simply use the extended parchment paper to life the bars out of the pan and on to a flat surface for cutting.
Expert Tip👉 To freeze the bars, place the cooled and set bars in a single layer in an airtight container or freezer bag before placing them into your freezer. When you are ready to enjoy them, simply thaw them in the refrigerator overnight or at room temperature for a few hours. The bars are best served at room temperature, as the chocolate will be softer and the flavor will be more pronounced.
