How to roast Cherry Tomatoes for this recipe.
You can skip this if you are using already roasted tomatoes.
Preheat your oven on low and prep a rimmed baking sheet with parchment paper.
Cut each tomato into slices and then place the slices on top of parchment paper.
Season the tomatoes as desired and place a drop of olive oil on top of each slice of tomato.
Bake the tomatoes for 50 to 60 minutes or until dried, flipping as needed. Allow the tomatoes to cool and then transfer them in a jar topped up with olive oil (they should keep for up to a month if refrigerated).
Ingredients needed to make Avocado Breakfast Bruschetta .
- Avocado- 1. The avocado should be ripe enough to smoothly spread on top of the bread.
- Lemon- 1 wedge (about â…›th of a lemon) or as desired.
- Eggs- 3. Vegans are welcome to omit the eggs on top.
- Bread- three slices. This particular recipe was made with sour dough bread. However, if you are wanting to be more 'true' to the Mediterranean diet, feel free to use a whole grain or similar bread instead, cutting the slices of the bread a bit thicker if possible to make this more like a bruschetta .
- Feta Cheese- One to two ounces or as desired. Vegan folks can omit this, use a vegan feta cheese, or tofu.
- Roasted Cherry Tomatoes- ¼- ½ cup or as desired.
- Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
- Olive oil for drizzling.
How to make Avocado Breakfast Bruschetta .
- Prepare the avocado by cutting in lengthwise in half and then remove the pit. Use a knife, such as a paring knife, to cut the meat from both halves in a crisscross way to make diamonds or squares. Place a shallow bowl by the avocado and then use a spoon or scoop to remove the meat from avocado and into the shallow bowl. Tip: flipping the avocado skin inside out can also help remove the meat from the avocado. Squeeze the lemon juice from the lemon wedge over the avocado. Then use a fork or masher to mash the avocado.
- To prepare the sunny side up egg (note: you can omit the egg or make the egg in your prepared method.) Heat a nonstick pan (spray with nonstick spray if desired) over low heat. Gently crack the egg into the pan. If you are making more than one egg in the pan, make sure that the eggs are separate from each other. Cover the cooking eggs and cook to your liking. Tip: Use a cookie cutter or egg ring to make your egg the perfect size and shape for your bruschetta (optional).
- Meanwhile, prepare the bread. Preheat a skillet on medium low heat with four teaspoons, or desired amount, of olive oil. Place the bread on the pan and toast it as your liking, flipping and seasoning the bread as needed.
