    Zucchini bread is bread that has fresh zucchini added for moisture, flavor, and for a healthy ingredients touch.

    Ingredients needed to make zucchini bread with chocolate.

    • Flour. All purpose flour was used to make my bread. If you use an alternative flour, select one that measures like all purpose flour and that can also be baked with. I have not tried this recipe using an alternative flour.
    • Baking Powder and Baking Soda. The leaveners used to help this bread rise.
    • Spices. Both ground nutmeg and ground cinnamon are used.
    • Light Brown Sugar. The sugar should be packed when it is measured.
    • Oat Milk. Added for moisture and a bit of flavor.
    • Oil. Also added for moisture. Select a neutral oil such as canola or vegetable oil.
    • Apple Cider Vinegar A small amount is used to help activate the baking soda.
    • Zucchini. Your zucchini should be shredded and then patted using a clean paper or kitchen towel to remove excess water (no need to squeeze the water out as some water is okay).
    • Vegan Chocolate Chips. While this can be omitted, it does add to the recipe.

    Tips for making the best chocolate zucchini bread.

    This recipe calls for using unsweetened cocoa powder. However, if you are looking for a less acidic and more deep chocolate flavor, you could try subbing Dutch process cocoa.

    More helpful tips for you.

    1. When adding the zucchini, use a rubber spatula or similar item to gently fold it in rather than beating with an electric mixer.
    2. Oat milk is the recommended vegan milk for this recipe as it is moist and dense. You can find a recipe for homemade Oat Milk Here.
    3. Adding a half teaspoon or so of espresso powder to the dry ingredients can help bring out the chocolaty flavor.
    4. Feel free to add additional ingredients such as dried berries or chopped nut for flavor and texture.
    5. To test for doneness, you can use the toothpick inserted into the center of the bread test. What you should know is that since there are soft chocolate chips, you may get a false result. Try the toothpick test in more than one location as the toothpick should come out with moist crumbs instead of wet batter.
    6. To make this recipe fully vegan, make sure that you are using ingredients that are fully vegan friendly. This is for both your wet and dry ingredients.

    How to make vegan Chocolate Zucchini Bread.


    Prep Time: 15 minutes.
    Bake Time: 1 hour.
    Servings: 12.

    1. If you have not done so, shred you zucchini. Then place the zucchini on a small stack of paper or clean kitchen towels to drain while you prepare the recipe
    2. Preheat your oven to 350F and double prep a loaf pan for nonstick. I like to line my pan with parchment that overhangs the pan on the sides. Then I spray the parchment paper with nonstick.
    3. In a medium bowl, use a whisk or a fork to combine together the flour, baking soda, baking powder, cinnamon, ground nutmeg, and cocoa powder. Set this bowl aside.
    4. Next, in a mixing bowl, use a whisk to combine together the oil, oat milk, brown sugar and apple cider vinegar. Then add the dry ingredients from the first bowl to the mixing bowl and mix until just combined.
    5. Scrape down the sides of your mixing bowl and then use a rubber spatula or similar item to fold in the zucchini and chocolate chips.
    6. Transfer the batter to the prepared pan and bake the bread for 50-65 minutes, or until a toothpick inserted into the center comes out clean. I would check in more than one place as the chocolate chips may give you a false negative.
    7. After you remove the bread from the oven allow the zucchini bread to cool in the pan for 10 minutes before you remove it. Then allow the bread to sit on a wire rack to cool completely.

    Expert Tip👉 Allowing the shredded zucchini to sit on a small stack of paper towels while you mix the other ingredients, allows for some of the water to drain off. While some water from the zucchini is okay, too much water can throw off the balance of dry to wet ingredients.

    How to store zucchini bread made with chocolate.

    Once your zucchini bread has fully cooled, it should be stored in an airtight container or wrapped well. When properly stored, zucchini bread should keep for up to a few days at room temperature or a few months when frozen.

    • 1⅘ cup Flour.
    • 1 tsp Baking Powder
