- Pears. Your pears should be peeled (or washed), cored, and then cut into small chunks (¼-1/2").
- Maple Syrup. Agave can alternatively be used,
- Lemon Juice. Added for a bit of tang and to help keep the color of the pears.
- Cornstarch. A thickener to help the middle layer. Arrowroot powder can alternatively be used.
- Spices . Ground ginger, cinnamon, nutmeg, and salt. This is divided as it can be added to the crust/crumble and filling.
Crust.
- Oats. Rolled or old fashioned oats rather than quick oats. Vegan or gluten free as needed.
- Flour. All purpose or gluten free all purpose.
- Brown Sugar. Coconut sugar can alternatively be used.
- Baking Powder. A small amount is used for a bit of leavening.
- Coconut Oil A vegan butter can alternatively be used. This should be melted.

For a softer filling use anjou or bartlett pears. These pears are flavorful that are easier to find and bake into a softer consistency.

- For a firmer filling use Bosc pears.
- Ripe pears, rather than firm or mushy pears, work best in this recipe when it comes to flavor.
- If you find that your filling is too runny or juicy, add additional cornstarch.

- Start by preheating your oven to 350 and prep a baking pan or dish with parchment paper that overhangs the sides of he dish. My bars were made in a square baking pan. Baking times and serving sizes can vary depending on what you are using.
- To prepare the filling, place the pear chunks, maple syrup, lemon juice, spices, and cornstarch in a mixing bowl along with any spices. Toss the ingredients well to coat the pears evenly. Then you can set this bowl aside.
- For the crust and crumble, in a large mixing bowl, use a whisk to mix together the oats, flour, brown sugar, baking powder and remaining spices.
- Add the melted coconut oil/vegan butter to the mixing bowl and mix until a crumble forms. Remove a third of the mixture as it will be used for the crumble topping. Then press the remaining two thirds of the mixture into your prepared pan to form the crust. It should be tightly pressed into the pan.
- Top the crust with the pear mixture in the first bowl evenly spread over it and then top the pears with the remaining crust/crumble topping sprinkled on top.
- Bake the crumble for 40-50 minutes, or until the top is golden brown and the filling is bubbling.
- Let the pan cool on a cooling rack before slicing.
Expert Tip👉 Allow the crumble to fully cool before lifting out of the pan using the overhanging parchment paper and slicing into servings.
How to store crumble bars.
Once the bars have fully cooled they should be placed in an airtight container and refrigerated for up to five days. Individually wrapped bars can be frozen for up to two months.
