Ingredients Needed to make Mediterranean Diet Couscous Salad
- Couscous. Your choice of couscous or a similar grain works in this recipe.
- Chickpeas. This is added as a protein and can be omitted if you are wanting to add a real protein (non-vegan version). Canned chickpeas should be drained and rinsed first.
- Cucumber. Chop or dice the cucumber into small pieces.
- Tomatoes. Use a bite-sized variety such as grape tomatoes. The tomatoes should be sliced in half.
- Sun dried tomatoes. I prefer the dried packaged version sun dried tomatoes as I want to keep the added oil in this recipe consistent.
- Olive Oil. Use a good olive oil and a similar flavorful oil. I have included below a quick recipe for celery vinaigrette dressing that can be used in this recipe.
- Feta Cheese. This can be vegan or regular feta.
- Additional add-ins include olives, basil, fresh lemon juice, and/or
Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
Expert Tip 👉 You can make a celery vinaigrette dressing by combining a quarter cup of olive oil, two tablespoons of vinegar (apple cider or white wine) with a celery stalk and seasonings in a food processor or blender.
How to make Mediterranean Diet Couscous Salad
Prep Time 15 minutes. Serves 6.
- To prepare the couscous, in a saucepan on medium heat, bring one and a half cups water to a boil. When the water begins to boil add the couscous and optional salt and then stir once. Close the saucepan with a lid and remove it from heat. Let couscous steam for 5 minutes. Then open the cover and let it cool. You can use a fork to fluff the couscous.
- Prepare the chickpeas, cucumber, and fresh tomatoes as indicated above.
- To assemble the salad, place the cooled couscous and chickpeas in a large bowl and give them a quick toss.
- Add the cucumber and the sliced tomatoes to the bowl and give the ingredients another quick toss.
- Drizzle the olive oil over the ingredients or toss with a and then add the remaining ingredients and serve.
