This salad can be made in less than ten minutes by placing the ingredients into a large bowl and tossing with the homemade vinegarette dressing. The dressing can be made up to two days in advance and refrigerated if needed.

Ingredients needed to make this Mediterranean Diet Apple and Feta Salad
- White Wine Vinegar. Apple cider vinegar can alternatively be used.
- Olive Oil. I like extra virgin olive oil for a vinaigrette dressing.
- Stone Ground Mustard. Really, about any kind of Dijon mustard works in this recipe.
- Garlic. Minced garlic.
- Maple Syrup. Honey can alternatively be used.
- Seasonings-Use as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper. My dressing was made with oregano, parsley, onion powder and pepper.
- Salad. My salad was made with using bagged Spring Mix lettuce. You can use the lettuce of your choice however. Your lettuce should also be cleaned and dried.
- Apples. For color and flavor, use a sliced green and a sliced red apple.
- Walnuts. Chopped or halved can be used.
- Feta. Fresh feta crumbles are used to top this salad.
How to make Mediterranean Diet Apple and Feta Salad
- Start by making the vinegarette dressing. Use a whisk or shaker to combine together all of the vinaigrette ingredients except for the maple syrup and seasonings. Then add the maple syrup and seasonings making adjustments for taste as needed.
- You can refrigerate the dressing while you assemble the salad.
- In a large salad bowl, place your lettuce. Tear and large pieces and give the lettuce a quick toss.
- Cover and refrigerate the lettuce until ten minutes before serving.
- When you are ready to serve the salad, drizzle some of the vinegarette over the lettuce and then toss the ingredients.
- Transfer the tossed salad into each of the serving bowls.
- Top the salad with the sliced apples, walnuts, and the feta cheese.
- Serve immediately.
