You probably already know that a mango can be sweet and juicy when you bite into it.
However, there are some nutritional benefits from eating mango.
Mango fruit is an excellent source of Vitamin C.
Mango is also a good source for Vitamin A and fiber.

Start by washing your mango to remove any dirt or debris on the skin. Then stand the mango up with the flat side facing down and cut off the thick sides from top to bottom cutting around the seed. Use your knife to cut the flesh from each of the sides from top to bottom, four lengthwise cuts should do it. Use a spoon to scoop this flesh away from the skin and then chop or slice it up for this recipe.

It is important that you store your salsa in an air tight container in the refrigerator, gently stirring it before serving. Doing so will allow this salsa to keep for a few days.
Unused mangoes can be frozen for later use.
To do so you will need to first remove the peel and then cut it up into chunks.
Place the chunks in an air tight freezer bag and store them for up to a few months (I use frozen mangoes in smoothies!).

- Mango- 1 Prepare your mango as described above. Remove the mango flesh from the peel and seed and then cut or chop it up for this recipe.
- Cucumber- ½ cup chopped or diced.
- Onion- ¼ cup diced. Red or green onions work well in this recipe.
- Cilantro- ¼ cup chopped plus additional for serving.
- Red Pepper- ¼ cup chopped.
- Green Pepper- 1 to 2 tablespoons. Feel free to sub in another kind of pepper such as jalapeno for all or part of the pepper.
- Lime Juice- 1 tablespoon.
- Salt as desired.

- I suggest using a medium bowl that comes with a lid to make this salsa in. Also, most people seem to use smaller pieces of mango and other ingredients in their mango rather than larger chunks. Feel free to alter the amounts of the ingredients to your liking as well.
- Combine the mango, cucumber, onion, and peppers in your bowl. Give this a quick stir and then mix in the lime juice and salt.
- Cover the salsa and place it in the refrigerator for an hour or up to overnight for the ingredients to work together. Serve with additional cilantro on top as desired.
