While you could use Rice Krispie cereal to make this recipe, I am listing "puffed rice" as the cereal ingredient in this recipe.
This is because I like that puffed rice has both a great structure for a bar and not a lot of added ingredients that I need to worry about in a recipe.
Marshmallows are not vegan because they are made with gelatin.
Besides not being vegan, marshmallows contain sugar and other ingredients that I do not enjoy.
As a result, we will use other ingredients to help bine the puffed rice and other ingredients together.

- This recipe is sweetened with maple syrup. To make this into a sugar free or low sugar puff treat recipe, you can use liquid sugar alternative instead. Please read the label however, to assure that the alternative that you are using measures 1:1 with maple syrup as less maple syrup is usually needed than most sweeteners in a recipe.
- Peanut butter is also used in this recipe. I suggest using an organic or natural peanut butter that has no added sugar in it. You could also use another kind of nut butter if desired.
- Just like most crispy cereal treat or snack bars, the ingredients need to be 'pressed' into a pan in order to become bars. You can use a spoon to help you do this or a piece of wax or parchment paper under your hands to keep the mixture from sticking to you.
You may be asking how do you store homemade bars.
I suggest cutting these bars before you store them. To keep them sticking together, you can place parchment or wax paper between them.
These vegan puffed rice bars should be stored in an air tight container.
Refrigerate these bars for up to a week or freeze them to enjoy later.
If you do freeze these bars, please allow them to defrost before serving as they will be hard.

Having said that, I urge to to read the labels on the ingredients that you use to ensure that they are fully vegan as well.

I suggest using an organic or natural peanut butter that has no added sugar in it. Organic and natural peanut butter usually has pure ingredients and no added sugar.
Ingredients needed to make Vegan Puffed Rice Snack Bars
- Puffed Rice Cereal- 3 cups.
- Peanut Butter- 1 cup. As mentioned, I suggest using an organic or natural peanut butter that has no added sugar in it.
- Coconut Oil- ¼ cup.
- Maple Syrup- ¼ cup.
- Vanilla Extract- 1 teaspoon.
- Vegan Chocolate Chips- 2 cups. This is for the topping.
- Coconut Oil- 1 tablespoon. This is for the topping.
How to make Vegan Puffed Rice Snack Bars
- Prepare a square baking dish with parchment paper that overhangs the edges of the dish.
- Place the puffed rice cereal in a large mixing bowl.
- Over low heat, combine the peanut butter, coconut oil, maple syrup, and vanilla extract in a saucepan. Stir constantly until the ingredients are blended together. Tip: Spray the saucepan with nonstick before adding the ingredients for easier clean up. Once the ingredients have blended remove the ingredients from the heat.
- Pour half of the blended mixture over the puffed rice that is in the large mixing bowl. Stir the ingredients and then add the remaining peanut butter and maple syrup mixture. Once the ingredients are all well blended you can transfer this to the prepared baking dish.
- Use a large spoon or your hands to press the mixture into the baking dish so that it is evenly distributed and compacted into place. Wetting your hands first or using parchment paper can make this an easier step. Refrigerate this for thirty minutes so that it can set in place.
- Next, remove the bars from the refrigerator and make the topping. Melt the chocolate with remaining coconut oil in the microwave using a microwave safe bowl for 45 seconds.
Stir this melted mixture, carefully handling it. Evenly pour the melted chocolate on top of the puffed rice, covering the entire puffed rice treat evenly. - Refrigerate for another 30 minutes or until the chocolate is hard.
Cut it into bars and serve.
