Ingredients needed to make this Peanut Butter Smoothie
- Bananas- 2 cups of sliced and frozen bananas. This is about two to three bananas depending on the size. You can slice already frozen bananas or slice and then freeze firm bananas. Also, you should remove the banana skin before freezing or slicing.
- Coconut Milk- ½ cup. Yes, you could use just almond milk however, adding a bit of coconut milk will give this a thicker texture expected from a smoothie.
- Almond Milk- 1 cup plus additional to thin our the smoothie as desired. Feel free to use another nut milk such as cashew milk if desired.
- Vanilla Extract- 1 teaspoon.
- Peanut Butter- 2 tablespoons. Smooth works best. I like to use an organic peanut butter or no sugar added peanut butter such as the kind that I make at home.
- Ice- 1 cup or as desired.
- Optional- chocolate chips for topping, vegan ice cream instead of coconut milk (shake?), and/or vegan sweetener such as maple syrup as needed. Also, some folks will make a smoothie such as this one into a protein shake by adding vegan protein powder (see packaging for amounts).
How to make Easy Vegan Peanut Butter Smoothie
- For a more 'liquid' smoothie, add the ice first. However, for a thicker smoothie that is more like a shake, add the ice last so that you can have more control over it.
- Place the frozen bananas in a blender with the milks (coconut and almond or alternatives), vanilla extract and the peanut butter. Optional ingredients such a vegan ice cream and vegan sweetener can go in here as well.
- Blend until smooth, about a minute depending on your blender.
- Add the ice and continue to blend to consistency. Smoothie consistency can be achieved in two to three minutes depending on your blender.
- Refrigerate or freeze leftovers.
