I like that this grilled tomato recipe makes for a great variety in what we put onto our grill.

This is another perfect way to serve up tomatoes.
I should also add that grilled tomatoes go great with just about anything else that you decide to grill as well.

I must admit that this recipe is a favorite because I do have an abundance of tomatoes acquired this time of the year, answering the question what to do with lots of tomatoes.
Yes, many of those tomatoes have been grown in my garden itself. However, I also have generous friends with successfully abundant gardens that are also bearing wonderful tomatoes.
The good news about tomatoes, other than they are delicious and easy to use, is that they are also pretty healthy to eat.
What I mean is that the average tomato has a good supply of Vitamin C, Potassium, and Folate. This is in addition to being relatively low in calories, carbs, and fat.
You may be wondering what tomatoes are best for grilling.
I must say that when it comes to choosing a tomato because of its flavor, the truth is that all tomatoes take on a great taste when they are grilled. It is a lot like onions when they become caramelized when they are cooked or grilled.
To grill tomatoes you can use any kind of tomato.
For smaller tomatoes, you could use a grilling pan to avoid the problem of tomatoes falling through the grates.
I will say that a tomato that is just ripe, red and firm yet without a lot juice, holds up best when grilling.

Here are some more great tips for you.
- For tomatoes on an outdoor grill, slice the tomatoes in half. Slicing from the top of the tomato to the bottom, rather than across the middle, will help your tomato hold its shape when grilled.
- Start by grilling with the inside up and the outside facing the grill. Then flip the tomato over to continue cooking.
- This recipe work great on an indoor grill. What I like to do is slice my tomatoes in thinner slices rather than in half. This allows the tomatoes to cook more evenly.
Seasoning is almost as important as the tomatoes are in this recipe.
Using Italian style seasonings may seem like a no-brainer in a recipe such as this one. However, perhaps using a seasoning that resembles a fire roasting would even taste better than Italian seasonings in this recipe .

What you will need in this recipe is olive oil.
Olive oil will be needed for prepping the grill grates or pan before you roast. Even more importantly, the olive oil will be used to prepare the garlic for this recipe.
By the way, you do not have to grill these tomatoes simply to go on the side of something else that you are serving.
Consider using these grilled tomatoes in a sandwich with some lettuce and what ever else you like to put into your sandwich. Or, these tomatoes are amazing when added to a pasta dish such as spaghetti or on top of pizza (think leftovers here)!

The ingredients needed to make grilled garlic tomatoes.
- Tomatoes- 6 tomatoes (more or less depending on the size). Choose tomatoes that are just ripe, red but, still firm.
- Garlic- 6 cloves sliced.
- Olive Oil- 2 tablespoons. Plus additional as needed for grilling.
- Seasonings as desired- This can include Italian Seasonings, Salt, and/or Pepper.
- Optional- Parmesan cheese for topping. (YUM!)
How to grill tomatoes and garlic.
- Slice your tomatoes as indicated above. For tomatoes on an outdoor grill, slice the tomatoes in half. Slicing from the top of the tomato to the bottom, rather than across the middle, will help your tomato hold its shape when grilled.
- Pre-treat your grill for nonstick by brushing oil or using nonstick. Preheat the grill to medium to medium high.
- Meanwhile, in a small bowl, mix together the oil and the seasonings. Then toss the tomatoes in the oil and seasonings. Place the tomatoes onto the grill. I like to start with the cut sized up to hold on to the juices.
- Toss the garlic in the small bowl with the remaining oil and seasoning. In a grill pan or small pan on the stove, cook the garlic until it begins to brown (about two minutes).
- Grill the tomatoes for four to five minutes and then flip them over to finish. It should take no longer than eight to ten minutes total to get a great looking grilled tomato. You can place the garlic and optional cheese on top of the tomatoes before removing the tomatoes from the grill or you can simply serve them together.
- Allow the tomatoes to cool somewhat before serving as they tend to retain heat on the inside.
