    Roasting the red peppers is done to enhance the flavor of them.
    You can roast red peppers on the stove or in the oven.

    Here is how to roast the red peppers in an oven.

    1. Preheat the oven to 500 and prep a baking sheet with aluminum foil .
    2. Divide the peppers into quarters and remove the seeds and insides.
    3. Roast the peppers until they begin to blacken and blister. This should take about 30-35 minutes. You should roast the quarters as needed during roasting to prevent uneven roasting.
    4. Remove the peppers from the oven and cover immediately with foil or a clean kitchen towel. Allow the peppers to cool for at least a half hour at which time the skins should be able to easily peel away.

    This feta and cheese dip gets better with time.

    I recommend making this recipe and then storing it overnight in the refrigerator.
    However, if time is of the essence, you can simply refrigerate the dip for a few hours to get a great flavor.

    Ingredients needed to make this Mediterranean style dip.

    • Feta Cheese- 1 cup.
    • Ricotta Cheese-1 cup.
    • Garlic- 2 cloves minced or chopped.
    • Red Peppers- ½ cup roasted and chopped. You can buy red peppers already roasted or you or you can roast them yourself using the instructions above. Be sure to drain your peppers if you are using jarred ones.
    • Seasonings as desired. This can include red pepper flakes, Salt, or even paprika.

    • This recipe can be made in a food processor or in strong blender such as a Vitamix blender.
    • Gently pulse the feta cheese in the food processor or blender to break up the chunks. Then add the ricotta cheese, garlic , and peppers and pulse until you reach your desired consistency, seasoning as desired.
    • Store this dip for at least and hour if not overnight in a covered bowl or similar container in the refrigerator before serving.
    • Serve with vegetables, chips, or even crackers. This dip should keep for up to a week if properly stored in the refrigerator.
