- Zest- lemon zest, lime zest, or orange zest for added flavor.
- Olive Oil. A similar neutral oil such as vegetable oil can be used instead.

Expert Tip👉 This cake can be easily customized by adding spices, chocolate chips, or unsweetened cocoa.
How to make Mediterranean Diet Mug Cake
Prep Time: 3 minutes.
Bake Time: 2 minutes.
Servings: 1.
- Give your mug a quick spray of nonstick or oil.
- Place the flour, sugar, baking powder, and zest (dry ingredients) into a medium bowl or measuring cup with a spout and use a fork to mix the ingredients together while breaking up any lumps.
- Next, use your fork to stir in the olive oil and milk until just blended.
- Transfer the ingredients to your prepared mug.
- Microwave the ingredients for 90 seconds (a minute and a half). Check the mug cake to see if the cake is set around the edges,as microwaves can cook at different rates. If needed, continue to microwave the mug cake in 30 second increments until your mug cake is done.
Expert Tip👉 Mug cakes will continue to cook after the microwave has stopped as this is the nature of microwave cooking. For this reason it is important to not overcook the mug cake and to also allow the mug cake to fully cool before eating. To remove the cake from the mug, carefully run a butter knife around the edges to loosen when you remove it from the microwave.
