The quick answer is yes, you can make a brownie without eggs.
Eggless brownies are pretty great tasting as well!

Eggs are added to a recipe such as this one for moisture, ingredient bonding, and for structure.

I should start by mentioning that this is a flourless recipe for brownies.
As a result, the moisture, ingredient bonding, and structure of the brownies will not be affected by the absence of eggs (this is still a great brownie by the way!).

  1. When choosing chocolate chips, make sure that you are using vegan chocolate chips instead of chips that have dairy added to them (milk chocolate..). Sugar Free diet followers can use vegan sugar free chocolate chips in this recipe.
  2. Coffee seems to bring out the chocolate flavor in a brownie recipe. Feel free to add a teaspoon of instant coffee if you would like to enhance the chocolate flavor in these brownies.
  3. The caramel topping used in this brownie recipe calls for peanut butter. Feel free to use another nut butter or omit the topping entirely if desired.

Ingredients needed to make no bake vegan chocolate brownies.

I will start with the brownie ingredients and then the topping ingredients will follow.

  • Medjool Dates– 1 ½ cups. That is about 13-16 dates depending on the size of the dates. There should be no pits in the dates and the dates should be soaked for a half hour in room temperature water and then allowed to drain before adding them to this recipe.
  • Walnuts– 2 cups.
  • Shredded Coconut– ½ cup
  • Unsweetened Cocoa Powder– ¼ cup.
  • Vanilla Extract– 1-2 teaspoons.
  • Coconut Oil– 1 tablespoon melted.
  • Peanut Butter– 3 tablespoons. You can find organic peanut butter and sugar free peanut butter here. This and the remaining ingredients are for the caramel topping.
  • Coconut Oil– 3 tablespoons, melted.
  • Maple Syrup- 1 ½ tablespoon.
  • Vanilla Extract– ½ teaspoon.
  • Optional- salt as needed (a dash in the topping or brownie is all you may need depending on what has been added to the ingredients themselves.) Also, vegan chocolate chips can be used for decoration.

How to make Raw Vegan Brownies.

  • Start by soaking the dates for a half hour and then allow them to drain. Remove the pits as well before using them in this recipe.
  • Line a square baking dish with parchment paper that overhangs the sides of the dish. This will help you remove the brownies before cutting them up into servings.
  • Use a food processor or strong blender to make this.
  • Pulse the walnuts until they resemble a course flour in consistency. You may need to stop as needed to scrap done the sides of the container.
  • Next add the dates, shredded coconut, unsweetened cocoa powder, (first) vanilla extract and (first) melted coconut oil. Blend these ingredients until they form a ‘sticky’ paste consistency. Then transfer this to the prepared baking dish, pressing the mixture in to even it out.
  • For the caramel topping, place the remaining ingredients in a medium bowl and whisk until combined. Then evenly spread this topping over the brownies and refrigerate for at least two hours, or until the caramel gets firm.
  • These brownies should be stored in an air tight contain. They should keep for up to seven days.
