I am sure this may have something to do with how you define 'biscuit' as in some locations what would seem to be a cookie to some, is a biscuit to others. However, when it comes to a biscuit that is not a cookie, there is a difference.
When it comes to ingredients, there is a difference between a biscuit and a scone.
Biscuits (not the cookie kind) are simple as they are made with few ingredients which are usually flour, baking powder, a fat, and a dairy (milk). Scones on the other hand,
will have those ingredients plus(usually) a sweetener, and egg, and maybe some fruit.
So you may be wondering what is the secret to making scones.
My first answer would be to not over-think making scones.
This is because scones, like biscuits, are simple recipes that, as long as you follow the ingredients and instructions, are pretty hard to mess up.
However, there are a few tips to get a better tasting or more flaky scone.
I always tell folks that using fresh ingredients, even the dry ones, is essential.
Also, unlike in most baked goodie recipes, cold dairy ingredients (even thought we are not adding dairy in this particular recipe) is another tip.
Tips for making scones.
So I just mentioned that it is essential that you use fresh ingredients for best results in this recipe. This is even true for the dry ingredients that you add (flour etc).

- This recipe calls for almond flour and coconut flour. Using these flours will also make this a more dense, yet gluten free recipe. If you decide that you would like to use all purpose flour, please sub that in for the almond flour only and continue to use the coconut flour for best results.
- I am adding 'Monk Fruit' as the sweetener to this recipe. Feel free to use sugar or the sugar alternative of your choice. Make sure that you use a granular sugar alternative that can be baked with and that also measure 1:1 with sugar.
- These scones really taste better when baked fresh. If you are wanting to save time for an upcoming event that you want to serve these scones at, try making the scones without baking them and freezing them (shaped and on the pan if possible) before baking them. No need to allow them to get to room temperature before baking as you can just tack on a few more minutes of baking instead.

In a small bowl, use a fork or whisk to mix together one tablespoon of chickpea flour and two tablespoons of water. Allow this to set while you prepare the other ingredients.
Feel free to use another egg alternative if needed.

These scones can be stored in a zip top back or air tight container for up to a few days. Feel free to freeze these scones in preferred.

How to make Vegan Blueberry Scones
I mentioned above that milk is used to make scones. However, in this vegan recipe, you can use a nut milkor oatmeal milk instead.
Also mentioned above that it is best to use fresh ingredients.
This is even true when it comes to the dry ingredients. However, you could probably get away with using frozen blueberries if needed.
Ingredients needed to make Vegan Blueberry Scones
- Chickpea Flour- 1 tablespoon.
- Water- 2 tablespoons.
- Almond Flour-2 cups.
- Coconut Flour- ½ cup.
- Granular Sugar Alternative- â…“ cup. This recipe uses monk fruit. Feel free to use any granular sugar alternative that measures 1:1 with sugar and can be baked with or sugar itself.
- Baking Powder- 1 tablespoon
- Coconut Oil- ¼ cup. Feel free to use another vegan butter alternative that measures the same. Coconut oil or other fat alternative should not be in liquid form.
- Vanilla Extract- 1 teaspoon.
- Vegan Milk- 1 tablespoon. Choices for vegan milk include nut milkor oatmeal milk .
- Blueberries- ½ cup. Fresh blueberries are preferred however, feel free to use frozon if needed.
How to make Vegan Blueberry Scones
- Preheat the oven to 375 and prep a baking sheet with parchment paper.
- In a small bowl, prepare your vegan egg. Simply mix together chickpea flour with the water. Set this bowl aside.
- Next, in a mixing bowl, use a fork or a whisk to mix together the Almond Flour, Coconut Flour, Sugar Alternative, and baking powder.
- Now, in a larger mixing bowl, mix together the coconut oil, vanilla extract, and vegan milk.
- So for this next step we will combine the ingredients from the three bowl together in the large bowl with the coconut oil mixture. When you add the ingredients to the bowl, mix until just combined. Do no over-mix.
- Roll our the dough onto the parchment paper to about 1" height and into a large square. Cut the dough square into four squares (pizza cutter works great!) and then each of the four squares in half. You should have eight triangles in the end. The triangles should be placed with plenty of room between them for baking.
- Lastly, carefully press the blueberries into each triangle.
- Bake for 10-12 minutes or until the scones begin to brown.
