- This recipe calls for 'vegan biscuits' which is another term for basic cookies. Biscoff cookies are perfect example of a vegan biscuit that would work in this recipe.
- Make this a sugar free recipe. Use a vegan sugar free cookie instead. Make this a gluten free recipe by using a gluten free vegan biscuit cookie.
- While this is a strawberry recipe, you could add other kinds of fruit. For example, you can add some blueberries on top of the cake or as a layer.
How to prepare strawberries for this recipe.
This recipe calls for a cup and a half of strawberries.
That is about 12 strawberries, plus any additional you would like to add as a topping.
Start by rinsing off your strawberries with cold water and allow them to dry.
Select three strawberries that are about the same size which can be used for the sides of the dessert. Remove the stems and then slice them lengthwise. The remaining strawberries can be cut into cubes.
How to store this vegan strawberry cake.
The Crumble cake can be kept in the refrigerator covered for up to four days. You can freeze it and keep it in the freezer for up to a couple of weeks.

This simple recipe can also be made using other types of seasonal fruit such as cherries or apricots, berries, raspberries, or even blueberries.
If you like to prepare a gluten-free version, you can use biscuits with rice flour or gluten-free biscuits.
I suggest that you use a glass bowl to make this in.
A trifle bowl is prefect for this recipe. Any similar glass bowl that is flat on the bottom could work as well.
Ingredients needed to make this vegan crumble cake.
- Strawberries- 1 Β½ cups, rinsed and prepared as described above (sliced etc). You can use additional for topping or any other fruit that you desire as well.
- Vegan Biscuit Such as Biscoff cookies - 2 cups crushed plus additional as desired for topping.
- Vegan Whipping Cream - enough for one cake, which can vary depending on which you are using.
- Also, Vegan Butter-β cup. I like something like vegan ghee or something that spreads like butter.
- Stevia- Β½ cup or as desired. Feel free to use another sugar alternative as desired.
How to make Vegan Strawberry Crumble Cake
- Prepare your strawberries by rinsing them and slicing them as described above.
- Crush the biscuit cookies in a food processor or by hand by placing the in a zip top bag and using a mallet or hammer to punch them down. Transfer the crushed cookies to a mixing bowl.
- Line the bottom of the bowl that you will be making this in with parchment paper.
- Melt the vegan butter as described on the packaging and then pour it into the bowl with the crushed cookies. When you are able to mold the ingredients into a shape, transfer it to the lined bowl and press the mixture into the bottom to use as a base (leaving some behind for the topping- you will not need all of this for the base). Place this into the refrigerator for at least a half hour to set. Meanwhile, you can whip up your vegan whipped cream with the stevia until fluffy. Then gently stir in the cubed strawberries.
- To assemble the crumble cake, take the set base out of the refrigerator. Start by lining the perimeter of the base with the strawberries that have been sliced lengthwise so that the bottoms are pointing up.
- Next, use a spatula to cover the inside of the cake with the whipped vegan cream with the remaining strawberries. Top the cake with the remaining crushed cookies that have been mixed with the melted vegan butter. If you used all of yours for the base, simply make some more. You can add additional strawberries or other toppings as desired for the top.
- Refrigerate before serving to set.
