- Maple syrup is the ideal vegan sweetener to use in this recipe as it is full of flavor and adds to the texture. You can however use another liquid vegan sweetener however, since maple syrup is more intense, I suggest that you use less of the alternative and taste as you go.
- Use fresh strawberries for the best flavor and smoother texture in this ice cream. Frozen strawberries on the other hand, can offer ice crystals that can help the ice cream stay colder longer.
- Can you use another fruit with or instead of the strawberries? Sure. Try using blueberries, raspberries, or even all three!
- Make sure that your coconut cream has been chilled overnight before using it in this recipe. This will make it easier to use and also will make your ice cream texture more consistent.
- Lastly, when combining the ingredients together, do so until just combined rather than over-mixing or over-blending. Over mixing the ingredients can make the texture too loose to enjoy as an ice cream

To make this recipe, we will simply combine the ingredients together and then freeze them (simple enough right?).

- Scoop ice cream into a vegan ice cream cone to enjoy.
- Add ice cream to a bowl and top with fresh fruit.
- Top your ice cream with some Homemade Vegan Caramel Sauce
Ingredients needed to make easy 3 Ingredient Vegan Strawberry Ice Cream.
- Coconut Cream. This is a dairy-free alternative to heavy cream that adds a rich, creamy texture to the ice cream. Unlike milk or regular cream, coconut cream is made from the meat of mature coconuts and has a higher fat content, which contributes to its creamy texture
- Maple syrup. Added as a vegan sweetener. You are welcome to use an liquid alternative of choice.
- Strawberries. Your strawberries should be sliced in half and have the stems removed. You can also save a few strawberries and slice them up to fold into the mixture rather than blending them in.
- Optional- a pinch of salt, vanilla extract, or lemon juice to the mixture before blending for additional flavor.
Expert Tipπ To make this recipe without using coconut cream you will need a cup of raw cashews that have been soaked overnight. Simply add the soaked cashews along with the water to your blender or food processor with the other ingredients.
How to make this 3 Ingredient Vegan Strawberry Ice Cream recipe.
- Use a loaf pan for ice cream or similar size and shape freezer-safe item. Freeze or refrigerate this for at least an hour if not longer before making this ice cream.
- In a blender or food processor, blend the ingredients until just combined.
- Transfer the blended ingredients into your prepared loaf pan. Then tightly cover the loaf pan with plastic wrap (I do this with two layers).
- Place the container into your freezer for the ingredients to freeze. It should take about six to eight hours for the ingredients to freeze to a good texture.
- When you are ready to serve your ice cream you can remove the container from your freezer allow it sit at room temperature for a few minutes to soften. Another option is to place the container in the refrigerator for 15-20 minutes to make it easier to scoop.
Expert Tipπ For smoother ice cream, simply blend the ingredients a little longer. Also, after blending the ingredients you can fold in chunks of strawberries or other ingredients to have flavor chunks in your ice cream.
Expert Tip πTo prevent ice crystals from forming and achieve a creamier texture, take the container out of the freezer every hour or so and give the ice cream a good stir. This will ensure that the mixture freezes evenly and doesn't become too hard.
