The pudding can take a minimum of two hours to thicken once the ingredients have been combined. However, this is the perfect recipe for making overnight pudding that can be enjoyed for breakfast or brunch the next day.

- To sweeten the pudding and compote, you can use maple syrup or agave. Maple syrup and agave measure similarly however, if you use another sweetener you may need to adjust the amount used to get the same level of sweetness.

- Chia Seeds. When soaked overnight, chia takes on a creamy or gelatin-like texture.
- Vegan Milk. My pudding was made with almond milk however, most any vegan milk can work. I would use a thinner milk (like almond milk rather than oat milk) for better chia absorption though.
- Agave or Maple Syrup. These are added for sweetening as well as adding a bit more moisture. Also, this is used to make both the pudding and the compote.
- Blueberries. Use fresh or frozen blueberries.
- Lemon Juice. This is added for a bit of acidity and for flavor.
Expert Tip 👉 You can add spices or other ingredients to make your pudding even better. I like cinnamon, vanilla extract, or even some chopped nuts on top for this recipe.
How to make Chia Seed Pudding with Blueberry Compote
Prep Time: 5 minutes.
CookTime: 8 minutes.
Servings: 6 (depending on size of jar).
- Start by making the pudding. In a small bowl, use a whisk to combine together the chia seeds, almond milk, and sweetener. Let the ingredients sit for five minutes and then stir them again to break up any lumps.
- Cover the bowl well and then refrigerate it for a minimum of two hours to, preferably, overnight.
- To make the compote, cook the ingredients on medium heat, stirring occasionally, until the blueberries have broken down and the compote has thickened. It should take eight to 10 minutes for the the blueberries to break up and release their juices for thickening. You can use a potato masher to help break the blueberries down.
- Remove the compote from the heat and let it get to room temperature before transferring to a container and storing it in your refrigerator.
- When you are ready to assemble your jars, simply layer the ingredients in each jar and serve.
Expert Tip 👉 If you are unsure of how sweet your compote should be, add only half of the syrup to the heating saucepan. Then you can add the remaining as needed when you remove the mixture from the heat.
