    About this No Bake Vegan Bars recipe.

    This is a two layer bar recipe for key lime flavored bars.
    To make this recipe you will need an eight inch square pan.

    The no bake base in these bars is made with almonds and coconut.

    Vegan diet followers can use packed pitted dates as an ingredient binder.
    However, almond butter can be used as an alternative especially for anyone wanting bars that are lower in sugar and carbohydrates.

    Ingredients needed to make Key Lime Bars.

    • Pitted Dates. These are used as the binder for the base in this recipe. An alternative ingredient to this is almond butter (use almond butter that has no other ingredients added to it). Adjustments may have to be made as needed if you are using the almond butter.
    • Raw Almonds. This is used instead of flour. Use almonds that are raw if possible.
    • Shredded coconut. Coconut adds both flavor and texture to the base.

    For the filling you will need these ingredients.

    • Lime juice. Use key lime juice for a more authentic key lime flavor. I prefer to use fresh lime juice that has no added sugar in it.
    • Canned Coconut Milk . This is used instead of dairy, such as cream cheese, to give the structure to the pie portion of this recipe. You want mostly the solid portion of the can.
    • Liquid Stevia . Really, you can use any sweetener of choice.
    • Vanilla Extract is used to help balance out the tartness of the lime.
    • Melted Coconut Oil . This is added for moisture and texture.
    • Raw Cashews. Your raw cashews should be softened by soaking for eight hours in room temperature water or 30 minutes in boiling water. Make sure that the cashews are fully drained before adding them to this recipe.

    Instructions for making No Bake Vegan Key Lime Bars.

    Yields 9 slices

    Preparation Time active time 40 minutes | chilling time 3 hours

    How to make this recipe.

    • Line your square baking pan with parchment paper and set this aside while you work.
    • To make the crust layer, pulse your almonds in a blender or food processor to ground them. Then add the dates and the shredded coconut. Continue to pulse until you get a grainy but, sticky mixture.
    • Press the mixture into the prepared square pan. Refrigerating the crust while you make the filling can help it set faster.
    • To make the filling combine together the softened cashews, lime juice, stevia, vanilla extract, coconut oil, and canned coconut milk in a food processor or blender and pulse until completely smooth.
    • Evenly spread the filling over the base that is in the pan.
    • Refrigerate until set (about three hours) before serving.

    EXPERT TIP👉The dates should be measured after removing the pits and then packing them into the measuring cup. They should also be moist and sticky. If your dates are dry, soak them in warm water for 20 minutes and then drain off the excess water.
