    Cucumbers are not just easy to grow, they are also low in calories and high in nutrients. As a favorite food in many, if not most, diets, cucumbers are both filling and low in calories (about 40 average) and carbohydrates (around 4 net).

    - Cucumbers are low in calories, carbs, and fat.
    - They are also a good source of vitamins C, K, and B6.
    - Cucumbers also contain minerals such as potassium, magnesium, and phosphorus.

    First, decide if you want to remove the skin or leave it on.
    If you leave the skin on the cucumber it is a good idea to gently scrub it under running water (I like to soak small ones first) to remove debris or anything coating it.

     It is best to store your cucumbers in your refrigerator and in a crisper drawer. Whole cucumbers can last for up to two weeks in the refrigerator. However, cucumbers that have been sliced should be consumed within three days

    Tips for making a cucumber salad.

    While my salad was made using an English cucumber, you can use any kind of cucumber that you like. Another option is to use two different kinds of cucumbers for a variety of shapes.

    Here are some more great tips for you.

    1. This is a salad that features sliced cucumbers as a base. You can however mix in or serve this cucumber salad with your favorite lettuce (making adjustment as needed for the dressing).
    2. This recipe is vegetarian however, you can make this vegan. simply swap out the honey with maple syrup.
    3. When preparing the sliced cucumbers for this recipe, salting is done. The process of salting the cucumbers helps to draw out the excess liquid is done to prevent the salad becoming too watery.

    How to store salad made with cucumbers.

    This salad should be stored in an airtight container and refrigerated.
    If properly stored, it should stay fresh for a couple of days.
    However, this salad is not suitable for freezing.

    This refreshing cucumber salad features sliced cucumbers that are coated in a simple white wine vinegar honey dressing. After combining the ingredients together, the salad is refrigerated for about 30 minutes to set.

    Ingredients needed to make Cucumber Salad With Honey Vinaigrette.

    • Olive Oil. Extra virgin olive oil is recommended.
    • White Wine Vinegar . While you could use red wine, apple cider or balsamic vinegar, white wine is the best complement to the honey.
    • Honey. Maple syrup can be used to make this a vegan recipe. You will most likely need less maple syrup than you would honey.
    • Cucumbers. If you leave the skin on your cucumber, you should probably clean the cucumber using your method of choice.
    • Salt. This is used to pull out the excess water from the cucumber.
    • Onion. My salad was made with a red onion that was sliced thin.
    • Fresh Mint Leaves . The mint leaves should be chopped or sliced small.
    • Optional- seasonings, such as salt, as desired as well as additional mint for serving.

    Expert Tip 👉 Slicing the onion as thin as possible will help to balance out the flavors in this salad. If the onion is sliced too thick, the flavor can take over the salad the as a result.

    How to make Cucumber Salad With Honey Vinaigrette Dressing.

    Yield: Serves 6 as a side

    Prep time: 15 minutes
    Sitting time: 30 minutes
    Cook time: 0 minutes

    Total time: 45 minutes

    1. Start by preparing the cucumbers. Slice the cucumbers in half lengthways and then use a spoon to carefully scrape out the seeds. Then slice the cucumber halves into thin slices.
    2. Place the slices of cucumber into a colander (over the sink) and toss with the salt. Then allow the colander to sit for about 30 minutes to drain.
    3. Rinse the cucumber slices and then blot them dry using a clean kitchen towel or paper towels.
    4. Transfer the drained cucumbers to a large serving bowl and then toss in the sliced onion and mint.
    5. To make the dressing, simply whisk together the ingredients. Then toss the ingredients in the dressing.
    6. Refrigerate the salad for 20-30 minutes for the ingredients to set together and then serve.

    Expert Tip👉When adding the dressing to the ingredients in the bowl, start by adding half of the dressing and the tossing the ingredients. Then you can add the remaining dressing to taste, making adjustments as needed.

    Ingredients

    Dressing

    • 2 tbsp Extra Virgin Olive Oil
    • 1 tbsp White Wine Vinegar
    • 2 tsp Honey - Maple Syrup for Vegan Version
