You may be wondering what are vegan lentil tortillas.
First off, you can call these "tortillas" or "wraps" as the tortilla wraps made in this recipe are intended to be used as either. I like to thing that the lentils are a healthy alternative to the usual corn that is used in most wraps or tortillas.
The lentils used in this recipe are softened so that we can use them like corn or flour in a tortilla wrap recipe.
You are welcome to use any lentil of your choice.
You should know that all lentils are vegan and low fat sources of fiber and protein.
Here are some other uses for recipe for lentil tortillas.
Add a half teaspoon of baking powder to the mix an make these tortilla wraps into flat bread.
However, you can bake the batter in a prepped rimmed pizza pan and make a pizza crust.

- Using a nonstick pan is essential in this recipe. You should also spray or oil the pan between making each of the tortillas. Doing both of these will help keep your tortillas from breaking.
- Cooking these tortilla wraps is somewhat like making pancakes. When the tortilla appears to be dry or cooked on top, you can flip it over to finish cooking.

Vegan Spinach Tortilla Wrap Filling.
Feel free to do what ever you want with your lentil wraps.
I have provided you with a tasty colorful vegan idea.
Ingredients needed to make the filling.
- Cherry or similar sized tomatoes-2 per wrap.
- Vegan Cream Cheese- 1 -2 tablespoon per wrap.
- Spinach Leaves- 4-6 per wrap or as desired.
- Corn- 1 tablespoon per wrap.
- Seasoning as desired.
Ingredients needed to make a homemade vegan tortilla wraps.
This is easy folks!
- Lentils- ¾ cup. Any color or a mix. Please use dried lentils for this recipe.
- Water- 1 cup. Cool tap water is fine.
- Nonstick spray or oil for cooking the tortilla wraps.
- Seasonings as desired. This can include Italian Seasonings, Mediterranean Diet Seasoning Blend, Greek Seasoning Blend, Salt, and/or Pepper.
How to make vegan red lentil tortillas
- Start by preparing the lentils for softening. Rinse the lentils under running cool temperature. Then transfer the lentils to a bowl and add the water. Cover the bowl loosely with a clean kitchen towel and soak for a minimum of three hours. You can allow the lentils to sit on the counter over night or refrigerate for up to a day and a half.
- Transfer the lentils and the water to a strong blender or a food processor. Blend or process on high for one minute. Stop the blender or processor, scrape down the sides, and continue to blend or process until the batter is smooth. Allow the batter to sit while you prepare the skillet for cooking.
- Use a nonstick skillet or cast iron skillet. Prep the skillet for additional nonstick as needed as this will prevent sticking and breaking. Preheat the skilled on medium heat.
- Use a ladle to transfer about a quarter cup of the batter to the center of the skillet. Rotate the pan to spread the batter. You can use the bottom of a spoon as needed to help spread the batter.
- Gently use a soft spatula to check the bottom of the tortilla to see if it it is done (about two minutes). Flip the tortilla over and continue to cook until done- about another minute. Then transfer the tortilla plate and cover with a clean mixing bowl or similar item to keep moist. Remove the pan from the heat between cooking tortillas. Continue with the other tortillas until done.
- To fill the tortilla wraps, simply layer the ingredients in the center and fold up the bottom and the sides.
