To make the crust for this recipe you will need the following ingredients:
- All Purpose Flour- 1 ¼ cup.
- Baking Powder- 1 teaspoon.
- Sugar- ½ cup. Feel free to use an alternative that measures the same as sugar.
- Coconut Oil- â…“ cup plus 1 tablespoon. This should be at room temperature.
- Cold water- 1 ½ tablespoon.
How to make the vegan crust for this recipe.
- Preheat the oven to 350 and double prep a square baking dish for nonstick. This means first spray the dish with nonstick and then line with parchment paper that overhangs the edges.
- In a small bowl, use a whisk or a fork to mix together the flour, baking powder, and sugar.
- Next, in a mixing bowl, cream together the coconut oil and water. Then add the flour mixture from the first bowl to the mixing bowl. Blend this together, using your hands as needed until the mixture is able to be somewhat moldable.
- Press the mixture into the press baking dish and bake until it begins to brown- about 10-15 minutes. Allow to cool.

- Raspberry Jam- 1 cup. You can use store bought raspberry jam or follow the recipe above to make your own.
- Vegan Crumble Crust- You can use your own crust recipe of follow the recipe I provided above.
- Almond Meal- 1 cup.
- Coconut Oil- 3 tablespoons.
- Sugar- ½ cup (feel free to use a granular alternative).
- Flaked almonds- ¼ cup.
How to make vegan raspberry crumble bars.
- Prepare the jam if you are making it yourself. Allow the jam to cool overnight.
- Make the crust as indicated above or using a crust recipe of your choice. Allow the crust to cool to a somewhat warm rather than just out of the oven warm temperature (10-15 minutes). Meanwhile, you can prepare the crumble topping by combining together the almond meal, coconut oil, sugar, and flaked almonds.
- Evenly spread the raspberry jam over the crust. Then top with the crumble. Bake for 10-12 minutes or until the crumble begins to brown.
- Allow the raspberry crumble to cool fully. Then use the parchment paper to lift it from the baking dish to cut into bars.
