    • Baking Powder and Baking Soda. Both are used as leavening agents in this cake.
    • Rosemary. Fresh is preferred but, you can use any kind if needed. This adds a nice balance of flavors which complement the orange.
    • Sugar. Use a vegan granulated sugar.
    • Olive Oil. This adds both moisture and a bit of flavor to this cake.
    • Orange Juice. Freshly squeezed orange juice that has no other ingredients added to it is preferred.
    • Oat Milk. This milk is preferred to other vegan milks because of its texture and flavor.
    • For the icing you will need orange juice and vegan powdered sugar.

    How to make Orange Olive Oil Cake

    Prep Time: 15 minutes .
    Bake Time: 50 minutes .
    Servings: 10 servings .

    1. Preheat your oven to 350 and prep your round cake pan well for nonstick. Double prepping is a good idea in this recipe.
    2. In a large mixing bowl, use a whisk to combine together the flour, orange zest, baking powder, baking soda, rosemary, and sugar. Then make a well in the center of the ingredients.
    3. Next, in a medium size bowl, use a clean whisk to combine together the olive oil, orange juice, and oat milk. Once well combined, pour these ingredients into the well that you made in the center of the dry ingredients.
    4. Use a rubber spatula to mix the ingredients until just combined, scraping down the sides of the bowl as needed.
    5. Transfer the cake batter to the prepared cake pan. Tap the bottom of the pan on your counter top a few times and then place the cake pan in the center of your oven.
    6. Bake the cake for 45-50 minutes or until the edges turn golden brown and a toothpick placed in the center comes out clean.
    7. Allow the cake to set in the pan for 30 minutes before inverting it over a cooling rack to full cool.
    8. For the icing, in a large measuring cup with a pour spout, whisk together the ingredients until blended and pourable (no chunks). Then pour the icing over the cake and allow it to set before slicing and enjoying.

    This cake is really best when served fresh. However, if you intend to store this cake, is should be stored, without the icing on it, in an airtight container in your refrigerator for about a week. The icing does not store well and tends to get sticky.
